Party Food: Mini S’Mores Cheesecakes

This weekend, we had friends over for dinner. Getting ready was a joint effort: Mike grilled the meat, Sam helped me with side dishes and then I decided to create something new for dessert. With the warm weather, we’ve been spending lots of time outside and I’ve been feeling extra creative. Over the past several weeks, I’ve been changing up some of our favorite recipes to include new ingredients. None have been so popular as these s’mores cheesecakes made with Gay Lea cottage cheese. This recipe makes a dozen… and during dinner this weekend, seven of us polished them off. They’re that good. 

Cottage Cheese S'Mores Cheesecakes with Gay Lea

The fresh air definitely increases my desire for fresh and healthy foods. Gay Lea is always a perfect option with their amazing line of quality products. I love that they are farmer owned and have such a great heritage behind them. It makes me feel even better about serving tasty treats like these s’mores cheesecakes to my guests. 

Cottage Cheese Cake


  • 2 cups Gaylea cottage cheese
  • 2 eggs
  • 2/3 cup icing sugar
  • 2 tablespoons flour
  • 1 and 1/3 cups mini marshmallows
  • 1 tsp vanilla
  • 1 tsp butter
  • 1 bag of semi-sweet chocolate chips
  • 1-2 teaspoons oil (such as grapeseed)
  • 36 additional mini marshmallows and graham wafer crumbs to top cakes


  • 12 graham crackers (or vanilla wafers)

Cottage Cheese Substitute for Cream Cheese Gay Lea S'Mores Cheesecakes


  1. Set oven to 275 degrees.
  2. Cut graham crackers into circles using kitchen scissors (or use vanilla wafers). Place crackers at the bottom.
  3. Liquify first four ingredients in a blender.
  4. Melt mini marshmallows, butter and vanilla.
  5. Blend with cottage cheese mixture.
  6. Spoon mixture over crackers, almost two-thirds full.
  7. Bake approximately 30 minutes or until set.
  8. Cool in pan.
  9. Remove, place on cooling rack put in fridge for 1-2 hours.
  10. Melt chocolate chips on stove in small saucepan.
  11. Thin with oil as needed.
  12. Spoon a thin layer of chocolate over set cream cheese.
  13. Top each mini cake with 3 mini marshmallows and graham wafer crust. Put in fridge until set.
