One Pot Chicken Dinner

Naked trees, rain and wind—when I think of autumn, today’s weather is not the ideal picture I imagine. Bright colored leaves that crunch in the nicest way is more to my liking. It will be snowing before we know it! Guess it’s natural to start thinking about the upcoming holidays. One of my friends already has all of her Christmas shopping finished—I can’t even imagine that!

When I think back on holiday traditions from my childhood, one of the constants is food. Right after Thanksgiving, when we were all turkeyed out, we enjoyed a pasta dish with lots of sauce and cheese. And we always had the same meal on the day we decorated our Christmas tree. It was also on the menu shortly after Christmas. Now I recognize why: after all of that special holiday cooking and busy-ness, no one wanted to spend more hours in the kitchen. I so get that now!


Since I’m the mom in the kitchen these days, I’m always on the look-out for full-flavored comfort meals that don’t take forever to fix—holiday or not! With Mike’s changing work schedule, he doesn’t always get to have dinner with Sam and me. We like to make the most of family meal time when he is home—but I’m busy too. I want special family time to be one of the childhood traditions Sam remembers when he is grown.

One Pot Chicken Dinner


  • Slice and rinse peppers
  • Add to pan with 1 teaspoon olive oil
  • Mince 1 clove garlic, add to pan
  • Dice 1 chicken breast (I used rotisserie chicken)

  • Cook until completely heated

Optional: serve over rice or pasta
