My dad and stepmom are here so I’ve been pulling out the fast and easy recipes – but they still have to taste great. This one is a simple dish that’s full of flavor and perfect for backyard summertime entertaining.

No Sauce Caprese Spaghetti

Fresh cherry tomatoes from our farmer’s market and basil punch up the taste. It doesn’t take a lot of time and it looks good.
Caprese Spaghetti Ingredients

Most of us think of chicken broth as a great foundation for many winter soups, but did you know you can use it in other ways, in other seasons? If you substitute chicken broth for plain water, the broth contributes another layer of flavor that adds a richness to the final dish. I use chicken broth to create my Caprese Spaghetti.

Cooking Spaghetti in Chicken Broth

Chicken Broth Spaghetti

No Sauce Spaghetti Recipe

  1. Boil spaghetti according to package directions, but use Swanson Chicken Broth instead of water.
  2. Drain the spaghetti.
  3. Add about one tablespoon of oil and one clove of garlic to the pan and saute the spaghetti on low heat for about five minutes.
  4. Remove spaghetti from the pan and add fresh cherry tomatoes, bocconcini cheese and basil.
  5. Top with your favorite balsamic dressing.

Sam’s Club has the newly released six pack of Swanson’s Chicken Broth so that makes it easy to stock up (I love going there with my Sam—he says it’s his store!). Be sure to check out the demo happening nationwide this coming Friday (7-31) from 10:30 am – 12:30 pm. I like having reserves in my pantry so I can pull a greater variety of meals together without having to make a lot of extra trips. Times like now, with Dad being here, I really prefer to spend time hanging out together and catching up.

Stephanie is in love with a boy named Sam. He has taught her that it’s okay to jump first and look later, to wear a dirty shirt to the park and to decide that today is a good day to take a nap in your rubber boots. She hangs out here blogging at Spaceships and Laser Beams and at our printable party shop on Etsy.
