Nachos with Pineapple Salsa

By  | Last Updated:

Zane is certain he’ll grow up to be a superhero (“A real one, Mom.”), but I’m not quite certain he’s found his niche yet.  Although he also likes to create in the kitchen, I’m not sure he’s ready for his own cooking program either. He sure can make messes though! Since I’m part of the Mom It Forward Blogger Network, I recently received a Swiffer Green Box and we put it to use pronto.

Best Pineapple Salsa Nacho Recipe

When I was making dinner—very delicious nachos with pineapple salsa—Zane made cupcakes for dessert. I supervised but he did everything…including making a mess! I consoled myself with the idea that creative opportunities can lead to a child’s future occupational success.  Or at least, very happy childhood memories!

He was so proud of himself and his lovely cupcakes. I was so proud of myself for letting it happen! But truthfully, I knew I would be using my new Swiffer WetJet after we were finished with our culinary experiments. Ever tried one?

The Swiffer WetJet is an all-in-one system that cleans floors with a solution that’s formulated to break up and dissolve tough messes. Makes you feel like a superhero’s mom! It’s convenient and quick. You just insert the cleaning solution bottle in the handle and squirt it where you need to clean up. The pad attachment effectively picks up the gunk—and then you can just throw the pad away. Little superheroes can even help.

Swiffer Duster

Easy to Clean with Swiffer

Swiffer sent me an extra Green Box to share with a friend. I had to laugh at myself when I gave it to my neighbor. I was waxing poetic about Swiffer, the WetJet, the Sweeper, the Duster (you should see how easily the Duster grabs the dust, even off the hard-to-dust, delicate petals on my lamp) when I realized I sounded like a commercial. On camera or not, it really is a great product.

Want to try one for yourself? Share a picture or video of your kids engaging in a mess-making activity that Swiffer could easily clean up. Hash-tag the brand for a giveaway entry—say “yes to the mess”.

And want to try my very delicious nachos with pineapple salsa? You can do it with or without a little helper…depending on how many messes you’re willing to clean up!

  • 1 can refried beans
  • 1/2 pound ground beef, cooked w/taco seasoning

  • nacho cheese sauce, optional (another garnish)
  • sour cream and/or black olives, optional (garnish)

Easy Nachos with Pineapple Salsa

  • 1 red bell pepper, cleaned and diced
  • 1 can crushed pineapple
  • 1/2 cup fresh cilantro leaves, washed and chopped
  • 1 jalapeno, finely chopped (leave seed in to add MORE heat)
  • 1/4 teaspoon salt, optional
  • 1/4 teaspoon pepper, optional
  • 1 lime, for juice

Pineapple Salsa for Nachos

Combine all salsa ingredients and allow to set for about 20 minutes. I used a blender/food processor to make it very fine – but that is not necessary.

Pineapple Salsa for Nachos

Arrange on a serving platter: chips, with beans, meat, and cheese. I put mine in the oven to melt cheese topping on the low broiler setting. Garnish with whatever you like…including your homemade pineapple salsa, sour cream, black olives and/or candied jalapenos.
