The kitchen is the hub of our family’s life. It’s central in our home and has become the go-to spot not only for tasty morsels but for interaction. Even though our kitchen is disproportionately small compared to the rest of the house, it’s where everyone seems to gather.

Let me tell you: baking bread is one of my favorite cold weather activities.

I love how simple and quick a good loaf of homemade bread is to create. And there is nothing better than the smell permeating the house as it’s baking. Yum!

The boys love experimenting with different flavors and mix-ins while we’re baking. Some combinations are less than desirable, but many are spot on and delicious.

This Lemon Poppy Seed Bread I’m sharing with you today is an easy recipe to make from scratch that I’m confident you’ll love. It’s homemade bread at its best!

Greek Yogurt for Baking

Ingredients for Lemon Poppy Seed Bread

For the bread you’ll need the following:

  • 2 eggs
  • 5.3 ounces Oikos® OH! Lemon Sweet Cream Delight
  • 1/3 cup + 2 tablespoons oil
  • 1 teaspoon vanilla
  • ½ cup lemon juice
  • zest from 1 lemon
  • 1 ¾ cup flour
  • 1 cup sugar
  • 3 tablespoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 3 teaspoon poppy seeds

For the glaze you’ll need:

  • 2 tablespoons melted butter
  • 2 tablespoons Oikos® OH! Lemon Sweet Cream Delight
  • zest from ½ lemon
  • 1-2 tablespoons lemon juice
  • 1 ¼ cup powdered sugar

Lemon Poppy Seed Bread with Yogurt

How to Make Lemon Poppy Seed Bread

In a large bowl, add the eggs and beat on high for 60-90 seconds until they are foamy.

Add the yogurt, vanilla and oil, then mix until smooth.

Add the zest and lemon juice, and mix.

Sift together the dry ingredients (minus the poppy seeds).

Add to the wet ingredients, and mix until combined. Stir in poppy seeds.

How Long to Bake Lemon Poppy Seed Bread

Pour into a loaf pan, and bake at 350 for 40-50 minutes.

Remove from oven, and let cool completely before glazing.

To make the glaze, whisk together all of the glaze ingredients.

I’m crazy about how this bread turned out. It’s absolutely gorgeous and tastes incredible.

I love that it only takes 10 minutes to bring together—making it the perfect quick, homemade treat for our family to make together.

As a rule, we always make everything in a double batch (because hungry boys), and I almost wish I’d made this Lemon Poppy Seed Bread in triple because it’s so good. The flavor is the perfect balance of lemon.
