That’s why I love the recipe I’m sharing today: it’s filled with our favorite ingredients and it comes together easily in one skillet. More on that in a minute.

To some extent, things have been a little more calm recently. We are in between sports seasons, which means more nights snuggled in at home together, which I love.

Good food and time together as a family are the way to make my heart happy.

The extra time at home means it’s been easier to follow through with one of my goals for 2018: more family dinners together at the table. I love cooking for my guys and trying new recipes for them.

Not only do they love eating, they love helping me in the kitchen. We have nightly dance parties during dinner prep… good music, a few dance moves and putting together a meal can make any day amazing.

One skillet meals are one of my favorites to serve. They’re so easy to put together and clean up is a breeze which I appreciate. Whichever son is on clean up duty that night appreciates the one skillet clean up too. 😉

  • • 2 Tbsp. olive oil
  • • 1 lb. boneless skinless chicken breasts, cut into bite-sized pieces
  • season with salt & pepper, if you’d like
  • • 1 Tbsp. flour
  • • 2 cups water
  • • 1 cup sliced carrots about ½-inch thick
  • • 1 package Knorr® One Skillet Meals – Lemon Chicken with Barley
  • • 1 package 6oz. baby spinach leaves


  • 1. HEAT your olive oil in a large nonstick skillet over medium-high
  • heat. Toss your chicken with flour and then cook 4 minutes until
  • browned. (Chicken will continue to thoroughly cook in Step 2 with
  • the barley.)
  • 2. ADD water, carrots and contents of Knorr® One Skillet Meals to the
  • skillet and bring to a boil. Cover, turn down the heat to medium-low
  • and simmer 23 minutes or until barley is tender. (For perfectly cooked
  • barley, make sure to keep covered.)
  • 3. PLACE your spinach on top of the barley mixture and cover.
  • Remove from heat and let stand covered 2 minutes (the heat will
  • begin to wilt the spinach). Stir until spinach is completely wilted and
  • well blended. Now it's delicious, dig in!


Chef’s Tip: Lightly flouring helps keep chicken moist during cooking.
