Company is coming! Yippee or yikes? Here are some last-minute entertaining ideas that will make you and your guests comfortable, including a great bacon-jalapeno recipe you can serve.

We’ve been going several directions this summer. All the necessities for daily living are getting done but my house isn’t exactly company ready. But when friends call for an impromptu drop-in, none of that matters. I always say, “Yes, come!”

Then I scurry. But I scurry with a plan.

Entering a home is a sensory experience. You look, you smell, you listen, you touch, and finally you eat! So, I take all that into consideration when friends are coming over.

And here’s how I get ready for unexpected guests:

  • Decide what to serve. I have a list of easy appetizers, beverages, and desserts that are my go-to menu for casual gatherings. I try to keep my pantry and fridge stocked with the needed ingredients so I can put something together quickly. If there’s time before guests are arriving, I do a quick spiff up of the house before food prep. Otherwise, I get the food going and power through as much of my list as I can.
  • Head for the head…and make sure it is presentable. Squeeze toilet cleaner in the john and while that is setting, do a quick wipe down of the mirror and bathroom counter. Put out fresh towels and toilet paper. Swish the toilet clean.

  • The area where you’ll entertain is next—living room, great room, porch, or deck. Pick up items that are out of place. Vacuum or sweep the floor if there’s visible lint or sand. Unless the house is unusually dusty, skip the furniture
    dusting chore.
  • Fluff pillows, arrange seating, turn on ambient lighting (a busy housekeeper’s friend??), and add background music.
  • Back to the kitchen. Everyone always ends up in the kitchen so quickly wipe off counters and little fingerprints on the front of the fridge. Clean the sink. Take out the garbage. If there’s time, give the floor a quick once over.
  • Where will guests enter your home? Straighten up there, too. First impressions and all that.

By the time the bacon-wrapped, stuffed jalapenos are ready, you’ve had a relaxed intro to the evening, probably some great conversation as you worked together, and everyone is ready to nosh. Yippee for company!

Bacon Wrapped Jalapenos

Bacon Jalapeno Party Dip

  • 8 ounces cream cheese (room temp)
  • 1 cup mayonnaise
  • 1 cup sharp cheddar
  • 3 diced green onions
  • 1 diced jalapeno
  • 8 slices of cooked bacon, chopped into small pieces


1. Mix together cream cheese and mayo until smooth.  Add diced green onions,
jalapenos, cheese.

2. Spread in a pie pan; top with chopped bacon.

3. Bake at 350 for 20-25 minutes.

You’ll need 10 jalapenos and 20 pieces of uncooked bacon.


1. Make the dip as same as above, omitting diced jalapeno.

2. Cut jalapenos in half and scoop out seeds.  If jalapenos are really hot, soak them in cool water for 30 minutes, drain and dry.

3. Cut each slice of bacon into two pieces.

4. Scoop a tablespoon of the mixture into the jalapenos.  Smooth down mixture so it’s not overflowing from the sides.

5. Place two half pieces of bacon side by side.  Place the jalapeno, cream cheese
side down, in the middle of the bacon slices. Wrap the jalapeno with bacon and set on a tray seam side down.  (Optional: place a toothpick through to keep
bacon more secure.)

6. Preheat a grill and layer with foil.

7. When the grill is hot, place the jalapenos seam side down on the foil.

8. Cook until bacon is golden brown, rotating until each side is cooked (about 2-3 minutes on each side).  Turn carefully because sometimes bacon sticks to foil.

9. Remove from grill; let cool.

Note: I did not use a toothpick. A few jalapenos lost their bacon but I just wrapped them back around to serve.
