And a seasoned mom with life skills under her belt knows study snacks are a necessity! Here’s a yummy quesadilla recipe that would satisfy any busy mom.

Roasted Corn & Green Chile with Bacon Quesadilla

Ingredients

  • 2 small green chiles (or ¼ cup of canned green chiles)
  • 1 ear of fresh corn
  • 2 strips of cooked bacon
  • 1 large tortilla
  • 1 cup shredded pepper jack cheese

Instructions

  1. If roasting the chiles yourself, place the chiles on a hot grill and roast until the skin is completely black. Place in a bowl and cover with plastic wrap.
  2. Shuck the corn and roast alongside chiles, rotating every few minutes. Place the corn in the bowl with the chiles and cover with plastic wrap. Let set for 10-15 minutes.
  3. Remove chiles from the bowl and place on a paper towel. Use the paper towel to help peel away the charred skin.
  4. Dice the chiles into small pieces.
  5. Lay the corn down on a cutting board and cut the corn off the cob.
  6. Lay your tortilla on a baking sheet and on one half, add ingredients, beginning and ending with cheese.
  7. Place under a broiler for 1-2 minutes, then flip and broil for another minute.
  8. Remove from oven and let cool before slicing. Serve with limes, cilantro and sour cream.
