A cup of coffee and a sweet treat, made with simple ingredients, is the perfect way to enjoy some “me time” and prepare for my day ahead.

Today’s recipe is a favorite of mine! It’s easy to create but the wow factor is off the charts… so is the flavor! I use McCafé Coffee, available at Walmart. It’s a premium quality coffee made from 100% Arabica Beans harvested from the rich soils and mountainous regions of the foremost coffee-growing areas of the world. There are eight delicious flavors to choose from in both premium bags and coffee pods, so there are options on how you can brew and enjoy it.

Easy Mocha Caramel Cupcakes

These are so simple to create! Take your favorite box of chocolate cake mix and combine all ingredients. However, instead of the water called for on the box, you will use that amount in coffee.

Mix all ingredients until combined well. I also added 1/3 cup of chocolate chips.

Next, fill each cupcake wrapper with a scoop of batter.

Caramel Mocha Cupcakes

Once baked and cooled, use a melon scoop to take the center out of each cupcake. Fill each cavity with caramel.

Frost with chocolate frosting and drizzle in caramel.

Serve with McCafé coffee and enjoy!

Easy Caramel Recipe

  • 1 packed cup brown sugar
  • 1/2 cup half-and-half
  • 4 tablespoons butter
  • Pinch salt
  • 1 tablespoon vanilla extract


  1. Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat.
  2. Cook while whisking gently for 5 to 7 minutes, until it gets thicker.
  3. Add the vanilla and cook another minute to thicken further.
  4. Turn off the heat, cool slightly and pour the sauce into a jar. Refrigerate until cold.

Chocolate Frosting

  • 1/2 cup (1 stick) butter, at room temperature
  • 3 cups powdered sugar
  • 1/4 cup whole milk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/3 cup semisweet chocolate chips


  1. In a medium bowl, using an electric hand mixer, beat the butter until light and smooth. Beat in the powdered sugar, milk and vanilla until smooth and creamy.
  2. Place the chocolate chips in a small bowl and place over a small pan of barely simmering water.
  3. Heat, stirring occasionally, until the chocolate is melted and smooth, about 2 minutes.
  4. Remove the pan from the heat. Add the melted chocolate to the vanilla frosting and stir until smooth.

I chose a medium decaf roast for this recipe. The flavor is rich and wonderful. I picked up coffee pods so I could also make a fresh cup of coffee to enjoy with my cupcake as well. It’s a special treat I look forward to enjoying again soon!
