Easy Gourmet Grilled Cheese Sandwich

We’re having grilled cheese sandwiches for lunch today.  Not just plain, old grilled cheese. We are having an easy gourmet version, something that is even company-for-lunch worthy: Bocconcini and pesto on whole grain Italian bread. Have you ever tried it? Mmm…my mouth is watering already!

Bocconcini is an Italian cheese. It’s a fresh variety of mozzarella that is in the shape of small balls, about the size of cherry tomatoes. Traditionally it was made from buffalo milk, but most often today it is made from cow’s milk. It’s very light and mild flavored and it pairs well with pesto in this sandwich. Although you can easily make your own, pesto is available as a ready-made condiment, which is quicker and makes this a snap to put together. However, IF you want to make your own pesto, chop about 2 ½ cups of fresh basil, ½ cup nuts (pine nuts are traditional, but walnuts work too) and 3 medium, minced garlic cloves. Add about ½ cup of extra virgin, first pressed olive oil, ½ cup of Parmesan cheese, salt and pepper to taste.

Are you getting hungry? This is what you do for the sandwich: Butter one side of two pieces of bread; that’s the outside that will make contact with your frying pan. 

Gourmet Grilled Cheese Sandwich

Spread your favorite pesto on the inside of one slice of bread and put it in the fry pan. Slice the Bocconcini and arrange it over the bread. Top it with the other slice of bread—butter side out of course.

Gourmet Pesto Grilled Cheese Sandwich

Fry over medium heat and flip it over to repeat so you have a lovely, golden brown, gooey, safisfying grilled cheese sandwich.  This looks and tastes wonderful with tomatoes, too.

For dessert you might consider a chocolate almond coffee granita ice…but that’s another recipe for another day!
