The only recipe I’m making for our Fourth of July celebration is Coconut Crème Pie No-Churn Ice Cream. It’s easy. It’s delish. That’s part of my vacation mantra for good times. How ‘bout you?

No Churn Coconut Cream Ice Cream Recipe

Coconut Crème Pie No-Churn Ice Cream

  • 2 cups cold whipping cream
  • 1 can sweetened milk
  • 1 can coconut milk
  • 1 package vanilla instant pudding
  • ½ cup toasted coconut
  • 1 heaping cup of roughly chopped shortbread cookies


  1. In a small bowl, mix together coconut milk and vanilla pudding until well combined. Set aside.
  2. In the bowl of a stand mixer, whip cream until it increases in volume and stiff peaks start to form. Do not over whip. Turn mixer on low and pour in sweetened condensed milk.
  3. Gently stir in pudding mixture and shortbread cookies.
  4. Pour into a bread pan and top with toasted coconut.
  5. Place in the freezer for 6-8 hours or overnight.
  6. Serve with caramel and toasted coconut.
