Christmas Dessert Recipes: Easy No Bake Cranberry Cheesecake

Here’s a kitchen secret: leftovers are my friends. I often intentionally make extra of a dish so I will have plenty of leftovers to work with for another meal. This helps me cut down on prep and cooking time, thus giving me extra moments to share with my family. Thanksgiving leftovers are no different. There are so many terrific leftover turkey recipes that I actually look forward to cooking after Thanksgiving is done. But I always have more than just an abundance of turkey left over after Christmas and Thanksgiving. There’re also plenty of side dishes and all the trimmings. I’ve been experimenting with how I can extend the excitement of these leftovers. Eating the same thing day after day can get tiresome real fast. I’ve come up with the idea of a no-bake, white chocolate cheesecake that is topped with leftover cranberry sauce.

I’ve found that pairing my leftovers with great products from Kraft, which are already staples in my kitchen, means it’s easy to create tasty and healthy meals with simple items you almost always will have on hand. If I’m missing an item, it’s solved with a quick run to Wal Mart to grab the missing ingredients. Sam FINALLY loves to help in the store and in the kitchen, so shopping together and having him help with meal prep is an easy and age appropriate way to get him involved.

Of all the traditional holiday dishes, it seems like there is always lots of cranberry sauce left over. I really enjoy the taste of it but after three days in a row it becomes a little ho-hum. I started making a very easy, no-bake white chocolate cranberry cheesecake with the left over sauce. It’s light and decadent, sweet and sour, all at the same time.

Cranberry Sauce

If you normally eat cranberry sauce from a can, there’s no excuse to do it anymore. It’s way too easy to make it yourself. And it tastes 100 times better. Throw all the ingredients in a small saucepan and bring it to a boil for about 20 minutes until the cranberries have all cracked open.

Here’s what you need:

  • 1 bag of cranberries
  • 3/4 cup of sugar
  • 1 tablespoon water
  • 1 tablespoon fresh lemon juice.


I could easily eat the crumbs from this crust right from the bowl. Because I use the Bakers brand coconut, I don’t add any sugar. It’s sweet and delicious enough. Just combine all the ingredients listed below into a medium sized bowl until thoroughly blended. Then press down into your serving vessel to make the crust. Let it set for a couple of hours if there is time.

Coconut Graham Crust Recipe

Here’s what you need:

  • 1 cup of graham cracker crumbs
  • 1/4 cup of Bakers brand sweetened coconut (finely ground)
  • 1/4 cup of melted butter


The fabulous thing about this dessert (other than it uses up some of your left over cranberry sauce) is that it is no bake. Once you have assembled the dish, just put it in the fridge for at least 2 hours to firm up.

Here’s what you need:

  • 1 package of Kraft Philadelphia brand light cream cheese (room temperature)
  • 1/2 tub of light Cool Whip (room temperature)
  • 6 squares of Bakers brand white chocolate melted
  • 1 small block of Bakers dark chocolate shaved
  • 1 small block of Bakers white chocolate shaved

To make the filling, beat the cream cheese thoroughly until smooth. Fold in the Cool Whip and mix very well until smooth. Melt the chocolate and stir in quickly. If you’re slow the chocolate will re-harden because of the coolness of the mixture. Stir entire mixture until it has a very smooth consistency.

Layering Instructions

Spoon in a layer of the cream cheese mixture. Top with a cranberry sauce. Sprinkle half the white chocolate and dark chocolate shavings over it. Repeat this process. I added several uncooked cranberries rolled in a little sugar to the top as a garnish.

You can find so many easy dessert recipes on blogs and Pinterest; it can be hard to choose just one. {Although, why choose only one — tis the season to enjoy more! :) } I’m already planning meal and dessert menus with special Christmas recipes. I’m pretty sure there are other ways to incorporate left over cranberry sauce, too…but this cheesecake is awesome!
