Creamy Chicken Noodle Soup & Cheese Biscuits

There is nothing better than a delicious bowl of creamy chicken noodle soup on a cold day. Especially when served with these completely amazing homemade cheese biscuits. Easy Dinner Ideas

Today, I’m curled up at home, watching the snow flurries fly outside my windows. Everything is buried in fluffy, white, fresh snow. And it’s still coming down!

For once, the weather predictions were totally accurate — and maybe then some. The forecast was for 4-8 inches of snow overnight… and I woke up to a glistening white winter wonderland.

After a long Thanksgiving break, my boys rejoiced when I announced it was a snow day this morning.

This is our first real snow so far this year and the boys can’t wait to go outside and play in it. I anticipate there will be a day of sledding, snowmen and snow angels ahead for us.

After our adventures in the great outdoors, I intend to have some quality time in the kitchen.

When it’s so cold and windy outside, I think it’s an absolutely perfect day to do some baking and enjoy warm goodies together.

Thankfully, I prepared for the snow and we have shelves fully stocked so there will be no shortage of yummy food while we’re tucked inside.

After hearing the weather forecast, I made getting groceries easy on myself by visiting my local Walmart and stocking up on easy dinner favorites!

I love how simple and convenient it is. I’m able to get everything that we want without spending too much time in the store. Brilliant!

One of the things in my cart this week was Progresso Creamy Chicken Noodle Soup — my whole gang loves it.

It’s a simple, delicious meal that we can enjoy any day. I know it will be extra yummy on such a cold day like today.

Creamy Chicken Noodle Soup with Cheese Biscuits

It is also an excellent dinner idea for those busy weeknights when I need a hearty, quick option that will fill everyone up.

One of my favorite meal hacks is taking something ready to eat like Progresso soup and serving it with something from scratch. It’s a great way to serve an amazing dinner that we can all enjoy. Even on those busy nights!

Cheese Biscuits

Since we’re sticking inside today, I’m baking up these homemade cheese biscuits to serve alongside our soup. They are the perfect savory biscuit, packed with cheese and rosemary with just the right balance of flavor and fluffy.

Ingredients for Cheese Biscuits

I’m kind of obsessed with this cheese biscuit recipe. My boys love to help me bake and you can’t beat how simple this recipe is to make!

Here’s what you’ll need:

  • 4 cups Self Rising Flour
  • 1 ½ cups shredded Italian 5 cheese
  • ¼ cup chopped rosemary
  • ¼ cup chopped parsley
  • 2 teaspoons ground pepper
  • 1 teaspoon garlic powder
  • ¾ cup frozen butter (1 ½ sticks)
  • 1 ¾ cup buttermilk

How to Make Cheese Biscuits

Start by combining flour, cheese, rosemary, parsley, pepper and garlic powder in a large bowl. Mix well.

Grate frozen butter on large holes on a box grater and stir into flour mixture. Chill 10 minutes in the freezer.

Make well in the center of mixture, add buttermilk. Stir until just combined. Knead in a bowl a couple of times to form a ball.

Turn dough onto lightly floured surface. Roll into 1-inch rectangle. Fold dough over so short ends meet. Repeat rolling and folding 2 more times.

Cut with 2-inch biscuit cutter. Do not twist cutter or biscuits will not rise. Place on baking sheet with parchment. Freeze 10 minutes.

Remove from freezer and bake at 450 degrees for 15-18 minutes or until golden brown.

I’ve doubled this recipe before so that we have enough for two meals because the boys eat them up so fast.

I think it goes without saying: we serve these fresh and hot out of the oven, with extra butter and a big bowl of creamy chicken noodle soup. It’s completely and totally drool-worthy.

My boys will easily eat up seconds and thirds when this is on the table. I love seeing them full and happy!
