Here is the “delectable” Blueberry Lemon Cupcake recipe I promised you yesterday. Sam and I had fun in the kitchen, mixing and stirring and tasting. We are both quite pleased with the results. Cupcakes are a great idea for birthday party dessert tables, but you certainly don’t need to wait for a celebration. These cupcakes look special, but they are simple to make. Certainly include them in your repertoire of desserts for the family—the extra kisses you’ll get are so worth the little bit of effort!

Combining mixes and Smucker’s ® Fruit and Honey Fruit Spread makes this fast and easy. While Sam and I were at Kroger yesterday, we picked up a lemon cake mix and a lemon pudding mix, in addition to the Smucker’s ® Blueberry Lemon Fruit & Honey Spread. The J.M. Smucker Company asked me to share a favorite way to use their Fruit & Honey Fruit Spread, so here it is. It really is delicious—kid AND mom approved!

Blueberry Lemon Cupcakes

  • Author:

  • Smucker’s® Blueberry Lemon Fruit & Honey Fruit Spread.
  • Your favorite lemon cake mix
  • Your favorite lemon pudding mix

  • 1 stick butter
  • 2.5 cups powdered sugar
  • 3 tablespoons Smucker’s® Blueberry Lemon Fruit & Honey Fruit Spread.
  • 1/4 teaspoon salt

  1. Add the lemon pudding mix to the cake mix. Make and bake according to the cake mix instructions.
  2. Once the cupcakes have cooled, scoop out a small hole in the center (a small boy is very helpful for this part). Fill the center with the Blueberry Lemon Fruit & Honey Fruit Spread

  1. Fill a piping bag with a 1M tip. Work from the center of the cupcake to the outside.
  2. Alternately, you can simply spoon and smooth the frosting with a knife.
  3. Drizzle a little extra of the fruit spread on top of each cupcake. Garnish with a few fresh blueberries, if desired.

Stephanie is in love with a boy named Sam. He has taught her that it’s okay to jump first and look later, to wear a dirty shirt to the park and to decide that today is a good day to take a nap in your rubber boots. She hangs out here blogging at Spaceships and Laser Beams and at our printable party shop on Etsy.
