Apple Stuffed Pork Tenderloin Wrapped in Bacon

Last year at this time we were busy moving, painting and making the new house our home. We did a ton of work on our yard…pulled everything out down to the dirt and started over. Talk about living in a sea of mud!

Being close to the lake and beach meant we also took time to entertain longtime friends, plus we met a few friendly faces in the neighborhood, too.

But this year I’m hoping to make more connections.

We now have a lovely, green yard and new, low-maintenance shrubs and bushes. Our new outdoor lighting adds a lot of ambience. It’s just the sort of setting for hanging out with friends in summer’s afternoon sunshine or evening starlight.

Nice weather signals it’s time to bring out the grill at our house and grilling is a people magnet. The tantalizing aroma of food cooking on the grill hints of good things about to happen!

Since we love to cook out, I have a great repertoire of recipes for grilling. My favorites are the crowd pleasers that don’t take a lot of time, like this delicious bacon-wrapped, Apple Stuffed Pork Tenderloin.

Bacon Wrapped Pork Tenderloin

Because Smithfield slow-marinates and seasons their 100% fresh pork, you don’t have to. It’s a quick and easy solution for a convenient dinner on the table any night of the week but it is special enough for company too.

By quick, I mean dinner is done in 30 minutes or less. Love it!

Smithfield Pork

I used the Smithfield Marinated Roasted Garlic & Cracked Black Pepper Tenderloin for this recipe. All you need to do is cut halfway through the tenderloin, arrange a few peeled and sliced apples in the middle of the pork, wrap it in bacon and grill over medium heat (about 375 degrees) for about 25 minutes or until the internal temperature is 150 degrees.

Add a fresh salad and a side such as grilled Brussels sprouts with almonds and cranberries. A basket of bread rolls is easy to warm on the grill, too.

Top it off with a sweet dessert. Make it easy on yourself by setting up a sundae bar with a few toppings. When it’s time, pull out the ice cream and let guests build their favorite combo.

All that’s left to do is enjoy the conversation. There’s a comfortable feeling whether you plop on the porch with plate in hand or move inside for a casual meal. Open ended timing allows you and your guests to “done and run” or linger, per schedules and interests.
