Chocolate Zucchini Bread

Now, I love a good zucchini bread — it’s actually one of my go to recipes and something that I make regularly.

We’re taking it up a notch today though: we’re adding in chocolate. Chocolate, you guys. A main food group in my opinion since I could eat this chocolate red wine cake every day of the week.

I love how simple it is to bring together and how amazing it smells when you take it out of the oven. If you want another AMAZING quick bread recipe, make sure you check out this pumpkin chocolate chip bread recipe.

Stephanie’s stepmom Eileen passed along this recipe to me. It’s incredible. As are all things that come to me from Eileen’s recipe box so it was no surprise to me how delicious this special treat turned out.

If you want to get creative while baking this zucchini bread, there are lots of yummy variations as well.  You can try making it with coconut oil, with apple sauce, with banana, with whole wheat or even going eggless. I usually bake it into one big loaf but you can also make mini loaves or muffins.

Before starting to bake, I was a little nervous though. Sometimes chocolate and oranges can give me heartburn. They’re both ingredients in this moist bread. That’s why I was so pleased to be able to share this insanely delicious chocolate zucchini bread recipe thanks to a partnership with Mirum.

I used to often skip some of my favorite foods because I knew I’d get heartburn from them. Not anymore. I started using Kroger Omeprazole Orally Disintegrating Tablets — designed to treat the symptoms of frequent heartburn. Since it’s available at Kroger (get $3 off with this Ibotta offer), it’s easy for me to pick up while doing my other shopping. As a busy mom, I love this convenience. Speaking of convenience, I love being able to use an orally disintegrating tablet instead of swallowing a pill.

Now that you know how to combat heartburn, let’s chat some more about this incredible chocolate zucchini cake.

You could also experiment with other ingredients including making this with coconut oil, with apple sauce, with banana, with whole wheat or even going eggless.

I’ve even made zucchini bread stuffed with cheesecake. It’s as awesome as it sounds.

You can make this into one large loaf or into mini loaves. My boys love the mini loaves because they each get their own. 🙂

How to Make Chocolate Zucchini Bread

In a medium size bowl, mix together dry ingredients.

In a large bowl, cream together butter and sugar.

Add eggs and mix until smooth and creamy. Then add vanilla, orange zest and zucchini.

Add the dry ingredients to the wet, a little at a time, alternating with the milk.

Pour into pan(s) and bake for 1 hour at 350 degrees.

This chocolate zucchini bread is amazing on it’s own… but with this special glaze, it’s even more amazing.

You’ll combine 1 ¾ cup powdered sugar, 3 tablespoons orange juice,  and 2 teaspoons orange zest. You’ll just combine the ingredients and once the bread is cool, pour the glaze on the top.

This process of making zucchini bread is quite similar to how I make my delicious lemon poppyseed bread — that’s to say, it’s so easy!

How to Store Zucchini Bread

Zucchini bread will keep in an airtight container for 3-5 days. You can also wrap it tightly and freeze it.

… if it lasts that long. In my house, it never makes it that long. 😉 Hungry little boys gobble it up.
