Our lives are so busy — parenting, work, home maintenance, extracurricular activities. It’s easy to fill our calendars with “have tos”. Over these past few years, Mike and I have kept schedules vastly different from one another due to his shift work. I know if we’re not careful, we’ll get lost in the busyness of day to day and not take time for one another. I have learned that in order to stay connected I need to be intentional. We set aside time for each other. Even though it’s abbreviated some days, I’m always thankful for the time we have to connect and talk.

With Valentine’s Day around the corner, I’m getting ready for a special evening, just for the two of us. While shopping this week, I picked up a Hallmark card to let Mike know how important he is to me. I love the gorgeous card I chose and I’m using it as my table decor inspiration. I decided to create a fun centerpiece for our dinner table based on the card’s image. I found feathers in the craft aisle for just $1 a bag! I made an arrangement with the feathers in a vase; I think it looks awesome along with my card to Mike. I’m using a roll of wrapping paper with hearts on it on the table. It makes (cut the) everything look so festive!

Hallmark has many amazing choices for cards this Valentine’s Day. They make it easy to thoughtfully connect with your partner and let them know what they mean to you. I think it’s critical to a healthy relationship to communicate your emotions and feelings beyond just saying “I love you”, especially since we are all so busy in our modern world. Taking (cut that) time to share your heart is really important. (cut Not just saying) Say “I love you” but share the reasons why. (cut That) Connection is what sees you through life and it should be nurtured! Valentine’s Day is the perfect time to do it. Our Valentine’s Day dinner is simple to create but I think it still has wow! I want everything to look romantic so I’m making things heart shaped. (cut I also loved that) There are items that we wouldn’t normally eat at a typical dinner with Sam, so it makes the whole meal feel more special and just for us. We’ll start with a simple drink that can be served with or without alcohol. Next, we’ll indulge in a delicious and fresh appetizer. Our main course meat pies will be filling and rich. For dessert, we’ll enjoy cupcakes.

Drink :: Strawberry Hearts and Mint Infused Water


  • Fresh mint
  • Strawberries cut into hearts using cookie cutter
  • Water
  • Optional: Add an ounce of vodka


Slide strawberry hearts onto skewers to look like arrows. 

Valentine's Day Appetizer

Appetizer :: XOX Caprese Salad


  • Grape tomatoes 
  • Fresh basil leaf
  • Bocconcini cheese


  1. Slice grape tomatoes on a diagonal and piece together to look like a heart. 
  2. Slide onto skewer, along with cheese. 
  3. Serve with balsamic vinaigrette for dipping.

How to Make Meat Pies

Heart in Hand Meat Pies

Main :: Heart in Hand Meat Pies


  • 1 pound ground turkey or ground pork
  • 1 package pre-made pie crust
  • 1/4 cup BBQ sauce {your favorite brand — we love Sweet Baby Ray’s}
  • 1/4 cup crushed walnuts
  • 1 cup goat cheese
  • 1 egg
  • You’ll also need heart shaped cookie cutters


  1. Fry meat until fully cooked and no longer pink. 
  2. Add BBQ sauce. 
  3. Cut heart shapes in your pie crust.
  4. Place a spoonful of meat onto heart, then add cheese and sprinkle with walnuts.
  5. Top with another pie crust heart. 
  6. Use a fork to close the edges and pierce the top. 
  7. Use a smaller heart to cover the holes from piercing. 
  8. Brush all over with egg. 
  9. Bake at 400 degress for 14 minutes or until crust is golden. 

Easy Valentine's Day Cupcakes

  • 1/2 cup (113 grams) unsalted butter, at room temperature
  • 1 cup (200 grams) granulated white sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (180 grams) cake flour, sifted
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120 ml) milk, at room temperature

White Chocolate Buttercream Frosting

{From Food and Wine}


  • 2 sticks (1/2 pound) unsalted butter, softened
  • 12 ounces white chocolate, melted and cooled slightly
  • 1 cup confectioners’ sugar
  • 1 teaspoon pure vanilla extract


  1. In a large bowl, using a handheld electric mixer, beat the butter at medium speed until creamy.
  2. Beat in the melted white chocolate.
  3. Add the confectioners’ sugar and vanilla and beat at low speed, scraping the sides and bottom of the bowl, until light and fluffy.

For the toppers, I used sparkly craft wire bent into heart shapes. Super easy to create and they really look stunning! 

Best Valentine's Day Card

This meal is something special! From past experience, I know we both love the flavors and the heart shapes will make it feel extra romantic. And yes, I’m going to add candle light to our conversation over dinner! It’s so important to me that we are able to talk and connect as a couple — beyond our everyday responsibilities. Good food, good company, good conversation and candlelight…I believe it makes all the difference in a relationship. I highly recommend it!
