Cold Mango Soup + Easy Kitchen Clean Up with Rubbermaid

Mike and I love to entertain friends in our home. Even though we focus on boy’s birthday parties here on the blog, I also love to entertain our close friends and their children for a casual evening in. Anytime friends are coming, I like to create a special dish to enjoy together. Usually I’ll take a common ingredient and make two versions: one kid friendly and one geared towards the adults. This weekend while hosting friends, I created a delicious cold mango soup for the adults to enjoy in some beautiful stemless wine glasses. {The kids enjoyed home made mango ice cream later.} I love to use my glassware, which only happens when we have adult guests since Sam isn’t quite ready for them yet. Clean up of my fine glassware is a different story though.

While I was picking up ingredients at Target, a new Rubbermaid Dish Rack caught my eye on the end of an aisle. I have a number of pots, pans and glassware that would be ruined if I put it in the dishwasher. Since I have to hand wash these items, I also have to safely dry them before putting them away. The Rubbermaid Dish Rack looked like the perfect tool to help keep my items safe! Not to mention it looks pretty sleek and fits right into our kitchen decor. I normally tuck away all kitchen gadgets when company is over, but since it blends in so nicely, I left it out.

I couldn’t wait for everyone to finish their cold mango soup so that I could wash the dishes and try out the new rack. Normally, Mike helps me dry – it’s a chore neither of us cares for very much. So the prospect of some help with our least favorite chore was most welcome.

Cold Summer Soup


  • 3 ripe mangoes (Alfonso)
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1 can coconut milk
  • 1/2 tsp ground cardamon (plus pinch to garnish)

  1. Peel mangoes and cut into chunks
  2. Add ingredients to blender and liquify
  3. Place in fridge until cold (up to 24 hours)
  4. Thin with additional liquid (coconut juice, water or orange juice) if necessary
  5. Serve in shot glasses for hors d’oeurves or wineglasses as a soup course

(serves 4 in stemless wine glasses or 8-12 in shot glasses)

The cold mango soup ended up being a smash hit. It’s an excellent recipe for spring and summer. I’m already looking forward to serving it again. Mike was excited with our easy clean up since we were able to utilize the new Rubbermaid Dish Rack instead of him having to towel dry everything. A definite win in both our books.
