I LOVE this time of year: spring has finally arrived and we can do some outdoor entertaining. Mike is a total grill master and we love having friends over to enjoy a meal in our backyard with us. After a winter cooped up inside, having the kids play freely in the back yard while we relax is delightful. Some of my best memories take place on our back deck with friends and family. I’m looking forward to the memories to be made this spring and summer out there!

Zyrtec for Allergy Relief

Last week, we got all of our patio furniture out. After a long winter in storage, it felt like saying hello to old friends again. I created a warm seating area with bright throw pillows, a fun, patterned rug and lots of candles. Mike has the grill ready to go and I’ve been experimenting with new recipes to serve guests. These peanut butter cupcakes with banana buttercream frosting are a new favorite that I can’t wait to share! 

Peanut Butter Cupcakes

Peanut Butter Cupcakes


  • 1/2 cup butter
  • 1 cup peanut butter
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3.5 cups all purpose flour
  • 1.75 tsp baking powder
  • 1/2 cup white milk


  1. Preheat oven to 350 degrees.
  2. Cream butter, peanut butter and sugar.
  3. Beat in eggs one at a time.
  4. Turn blender to stir and add in vanilla.
  5. Sift flour and baking powder, gradually add into mixture.
  6. Add milk and blend on low only until well mixed, do not over mix.
  7. Bake for 20 mins or until cupcakes are fully cooked in the middle.

Makes 12 cupcakes. 

Banana Buttercream Frosting


  • 1 banana
  • 1/2 cup butter (room temperature)
  • 1/2 tsp vanilla
  • 1/4 tsp vinegar
  • 1/4 tsp salt
  • 3 cups powdered sugar


  1. Remove any dark spots and put banana in mixer on low, blend until all lumps are removed.
  2. Cream butter, vanilla and banana.
  3. Stir in vinegar and salt.
  4. Gradually add in powdered sugar.

Because of the banana, this frosting is best used the day it is made. Once cupcakes are cool, frost and serve.
