Back to School: Backpacks, Snacks & More!

Sam heads back to school next week. He’’s excited. I alternate between being happy for him and feeling a little sad.  I’’m so glad back-to-school means elementary school and not heading off to college yet! I know that day will come, but for now I don’’t even like to think of it!

Back to School Clothes for Boys

Sam’s school is a small, country town school.  They require students to wear uniforms so that makes shopping for school clothes really easy. There’s not even potential for a head-butt! There’s also not a lot of room for imagination in clothes…but Sam doesn’t seem to care about that. We (I?) love using his outerwear and backpacks to make a statement. Choosing a fun backpack is important to Sam! He has a couple of new ones and they are “really cool, Mom”. The Space Racer has wings and it actually lights up. The Rocketflyer has spaceships on the wings.  Yeah, I am partial to that one!

Sam’s new backpacks are from Bixbee. They are really made well. They have contoured shoulder straps with cushy padding. There are all kinds of pockets ready to be filled with school supplies and treasures. These styles are recommended for kids from 36”– 42” tall. Another great thing about this company is their “One Here. One There.” program. For every backpack that is purchased, they donate a schoolbag with supplies to a kid in need. The Bixbee backpacks are literally making their way all around the world and imaginatively, all around the universe. At least, Sam’s is.

At our house another part of back-to-school planning is having after-school snacks ready. This is one of my new favorites for this year.

  • 2 apples
  • Store bought dough (crescent, phyllo, etc)
  • Caramel sauce
  • Powdered sugar

Baked Apple Recipe


  1. Peel and core apples
  2. Using the corer to shave the sides of the hole you made, make the hole larger; my opening was about twice the size of the original hole
  3. Make apple slices into approximately 1/4 inch thick rings
  4. Roll out dough, cut into thin strips and wrap around rings
  5. Bake according to package instructions
  6. Eat plain or top them with caramel sauce and powdered sugar
