Our family just returned from a jaunt to Florida. Ahh, sunshine in winter! Mike ran in another marathon while we were there. His commitment to a nutritious lifestyle is stellar—he convicts and inspires me. As a result of his passion, our whole family has transitioned to a more wholesome way of eating and although I’m not training for a marathon, I am seriously pursuing exercise and better eating habits.
I love it when good for you food choices are the ones you’d reach for anyway. For example, I love the taste of avocados and include them in our diet regularly. I frequently use them in guacamole, in salads, sandwiches, dips, milk shakes, puddings, and I love them grilled. I was glad when Mom It Forward gave me the opportunity to talk about Avocados From Mexico. Advocate for avocados—that’s me!
When I eat avocados, I always feel satisfied. That’s because avocados contain 8% of your daily value of fiber which adds bulk to your diet, helping you feel full faster and increase satiety. Avocados are also nutritionally dense and contain unsaturated “good” fat. There’s no cholesterol in them and there are about 20 vitamins, minerals and phytonutrients. They also act as a nutrient booster by helping the body to better absorb fat-soluble nutrients from foods that are eaten with the fruit. BAKED AVOCADO FRIES
- 1 avocado from Mexico
- 1/2 cup bread crumbs with seasoning
- 1/2 cup egg white
Preheat oven to 350 degrees. Slice avocado lengthwise and twist to separate and remove pit. Slice each half avocado into 5 slices. Fully coat in egg white and then roll in bread crumbs. Bake for 24 minutes, flipping halfway.
Cilantro Lime Dipping Sauce
- 1/4 cup of light sour cream
- 1/2 clove garlic
- 1/2 teaspoon chopped fresh cilantro
- 1 teaspoon fresh lime juice
- Optional: 1/4 chopped shallot
Combine ingredients and enjoy!
