Valentine’s Menu Idea: Strawberry Goat Cheese Salad

This salad features is one of my favorite flavor combinations. We eat it regularly but I think it would also make a fabulous salad for your Valentine’s Day menu. The salad, itself, only has three ingredients but it is sooo good. The greens are a baby spring salad mixture. I add crumbled goat cheese – usually plain but most recently I have been doing a herbed version — and fresh strawberries. {As an option, if I have it in the cupboard, I add trail mix and it’s perfect with these flavors.} For a dressing, I usually either make my own balsamic vinegarette with balsamic vinegar and olive oil or opt for a creamy poppyseed from the grocery store.

I think the fresh flavors in this salad make it perfect for a Valentine’s Day menu but I couldn’t resist going over the top. Using a tiny heart shaped cookie cutter I cut the strawberries into hearts and then sliced them in half. With the “leftover” cut outs I just chopped them up for Sam’s lunch the next day.

I absolutely love the way they looked in the salad and I am thinking of trying it for other occasions – such as using stars for the 4th of July or tiny maple leafs for Canada Day.
