Now that the busy holidays are behind us, I’m happily getting back into the swing of regular life. This means meals at home with my favorite guys, Mike and Sam. This year, now that Sam is a little older, Mike and I are striving to have more one-on-one time together. We can’t always go out for dates, so I’ve been working on recipes we can enjoy together at home. I’m especially intrigued with items that are easy and quick to make, since we don’t always have lots of time to work with.

As I start thinking about Valentine’s Day, I wanted to create a delicious meal that Mike and I can enjoy together. It was important to me that it would be nutritious, filling and easy to create. This easy breakfast idea could easily be done any morning of the week — no matter how busy! But it’s both delicious and gorgeous so it’s great for a special occasion. Since Mike is on shift work, this was my dinner and his breakfast. And we both loved it!

How to Shape Rice

Cooking Egg in a Shape

Ingredients

  • 2 packages Minute® Ready to Serve Rice Brown Rice {this makes a little more than one cup}
  • 3/4 cup shredded cheddar
  • 1 tablespoon chopped fresh cilantro
  • 1/4 cup black beans
  • 1 teaspoon cumin
  • salt and pepper to taste
  • 2 eggs
  • salsa and sour cream to top

You’ll also need…

  • 2 large heart shaped cookie cutters
  • 1 large circle cookie cutter

Method

  1. While your Minute® Ready to Serve Rice Brown Rice is in the microwave, place cookie cutters on frying pan and heat the frying pan very hot.
  2. Crack one egg in each cookie cutter then immediately reduce to low heat.
  3. Cook about 10 minutes for runny eggs or 15 minutes for hard eggs. 
  4. Once rice is cooked, empty both containers into a bowl and stir in cheddar, cilantro, black beans, cumin, salt and pepper.
  5. Press rice mixture into circle cookie cutter. Remove the cookie cutter.
  6. Then top rice with salsa and sour cream.
  7. Add egg and enjoy.
