Unique Dinner Party Food: Meatloaf “Cake” with Sweet Potato “Frosting”
Visiting our local farmers market is one of my favorite things to do this time of year. Our city is surrounded by agricultural land so the seasonal local produce is plentiful.The autumn harvest is rich in earthy colors and seasonal produce that cant be beat. Apples, pumpkins, a wide variety of winter squash and sweet potatoes are absolutely spilling over the stalls. I love it! What can you do with all that bounty? One of our favorites is a meatloaf recipe with a whipped sweet potato topping — kind of like a cake! Best of all, it is that it is super easy meatloaf but looks cute enough to put on an entertaining menu to serve to guests.
I sort of have this love affair going with sweet potatoes; they were my favorite vegetable even before I had a conversation with a farming couple I met at the market. They used to make great money with their tobacco farm, but they had a crisis of conscience and decided they no longer wanted to grow tobacco. After researching what would be the polar opposite of tobacco in terms of healthy benefits, they landed on the sweet potato. Now they are sweet potato famers.
That conversation made me curious about the healthy benefits of sweet potatoes. I found they are rich in essential nutrients such as vitamins A, C, and B6, potassium, copper, iron, and manganese. There is no fat or cholesterol; they are fiber rich. The antioxidants found in the sweet potato help eliminate the bad guy free radicals and they are also anti-inflammatory.
Meatloaf Cake with Sweet Potato “Frosting” Recipe
- 1/2 lb extra lean group beef
- 1/2 small onion chopped
- 1 egg whisked
- 1 slice stale bread cut into fine pieces
- 2 cloves garlic
- 1.5 teaspoons chopped fresh flat parsley + additional parsley for garnish
- 1/3 cup of chili sauce + another 1/4 cup chili sauce
Preheat oven to 350 degrees. Combine all items until well mixed. Grease a small cake pan (I used a 6″ round) and pour meatloaf mixture into pan, smoothing out top until it is flat. Bake for 40-50 minutes or until meatloaf is cooked through (will vary depending on cake pan you use). Remove from oven when done and let stand for 5 minutes. Invert onto baking tray. Spread additional 1/4 cup chili sauce all over “cake” with a BBQ brush.
Sweet Frosting Recipe
- 1 very large sweet potato
- 1 tablespoon butter
- 1 tablespoon maple syrup
Boil sweet potatoes until very well cooked. Blend with butter and maple syrup until smooth. Ice meatloaf “cake” with sweet potato “frosting.” Broil cake in oven until sweet potato turns golden in areas. Remove and use a large spatula to transfer cake to serving plate. Garnish top with additional parsley. Cut into wedges as you would a cake. (Handle potato carefully.)
This recipe is a super way to enjoy the value and taste of the autumn harvest. Add a fresh green side salad and you have an easy and nutritious meal. Dont you just love the fall season?!
