Because Mike, Sam and I live far from our families, we usually spend Thanksgiving at our home before visiting loved ones at Christmastime. Over the past few years, Thanksgiving has become a special time for us to connect with friends and share a fantastic meal together. Reflecting on what’s important in our lives and being thankful is a great way to spend the day! Mike and I are working to instill an attitude of gratefulness in Sam, teaching him how important it is to appreciate all the good things you have in your life. One of my favorite traditions we’ve incorporated is going around the table and sharing something we’re each thankful for.
Last Saturday, Sam and I headed to Walmart to do some shopping in preparation of Thanksgiving. There were Fall Marketplace Demos happening all afternoon, which gave Sam and I the chance to hear about great products and sample them while we shopped. There were lots of tasty ideas!
After our big meal with friends, I was left with a fridge full of leftovers (for all of you non-Canadian readers, Canada celebrated our Thanksgiving yesterday). Leftovers are fun for about one meal in our house and after that, mama needs to get creative to get everyone to eat them. I pulled out some of the items Sam and I purchased at Walmart, like Hamburger Helper 3 Cheese Manicotti and created a dish utilizing our leftover turkey. Hamburger Helper now has less sodium, making it a great dinnertime option. By adding fresh vegetables and herbs, the possibilities are endless! I also baked a couple of appetizers to start off our meal — Our Finest Bacon Wrapped Scallops and Our Finest Cheddar Smokey Bites. Sam was thrilled and loved they they were “just his size”. Mike and Sam loved our meal, which excited me since they both can be picky eaters.
Turkey & Three Cheese Manicotti
- Hamburger Helper 3 Cheese Manicotti
- 1 yellow pepper
- 1 orange pepper
- 1 teaspoon oil
- 2 cups skim milk
- 1 1/4 water
- 2 cups leftover turkey
- 1 clove of garlic
- 1 tablespoon fresh flat leaf parsley
- red pepper flakes, if desired
- In a deep frying pan or wok, sautee 1 diced yellow pepper and 1 diced orange pepper in 1 tsp oil until tender.
- Add in 2 cups skim milk, 1 1/4 cups hot water as well as the pasta and sauce packet from the Hamburger Helper 3 Cheese and Manicotti package.
- Bring to a boil.
- Add in 2 cups leftover turkey.
- Reduce heat to low and let simmer.
- Add 1 clove garlic and 1 tablespoon of chopped fresh flat parsley.
- Sprinkle in red pepper flakes to your desired heat/spice level.
- Stir occasionally until sauce is thick and pasta is cooked through.
Since both Mike and Sam asked for the dish again, I’m deeming it a winner for our family. I don’t think either of them fully realized I was using the leftover turkey even, which was great. We polished off dinner by sharing Apple and Rhubarb Strawberry Tarts from the Walmart bakery. The six inch size meant they were perfect for sharing. This is a meal we’ll certainly repeat this fall!
