Thai Green Curry Chicken

In addition to my Sweet Chilli Baked Brie appetizer, one of the recipes I am planning on putting on my menu is a Thai green curry. We always get it at our favorite local Thai restaurant and Blue Dragon makes it easy to replicate at home.
How to Make this Easy Green Curry Chicken and Red Pepper Recipe
For this recipe you will need:
- 1 large red pepper, chopped finely
- 2 skinless boneless chicken breasts, chopped into small chunks.
- 1/4 jar Blue Dragon green curry paste
- 1 can Blue Dragon coconut milk
This is super easy to make. Put the curry paste in a sauce pan and let it heat up so that the oil separates and the flavors are released. Add in coconut milk and stir. Add the red pepper and chicken and cook until the chicken is done.
I really wanted this recipe to read like Valentine’s so I cut out heart shapes from the red peppers using a small heart shaped cookie cutter. (Use a plate to press down on the cookie cutter so you don’t kill your hands.) With the remainder of the pepper, I cut it finely and put in the curry as well.
This curry paste has some real heat – fitting for Valentine’s Day! But the curry itself is fairly mild in flavor so the combination should work for a lot of paletes.
