My love for creating interesting tastes has given me a reputation in our circle of friends. I love it. Whether it’s a simple get-together or dinner party, I often find myself eagerly volunteering to bring “something”. There’s just something so satisfying about making and sharing food. This recipe for Barabacoa Chicken Wings is one of my latest experiments. It’s a full-flavored taste with a lot of dash—but it isn’t so fiery that you only have the perception of “hot” and no taste.

It’s great anytime, but I think it’s an especially good take-along for fall’s football tailgating.

I used my new Crock-Pot slow cooker for this recipe and I like how it enhanced the mingling of flavors and mellowed the taste without drying things out. That’s a real win in my book.

SLOW COOKER BARABACOA CHICKEN WINGS

Ingredients
  1. 3 pounds chicken wings
  2. 1 teaspoon salt
  3. 1 teaspoon cumin
  4. 1 teaspoon chili powder
  5. 1 teaspoon garlic powder
  6. 1 teaspoon onion powder
Instructions
  1. Toss wings with seasonings and place in a slow cooker for 3 hours.
  2. After an hour, gently toss the chicken wings and add half of the barbacoa sauce.
  3. After the wings are done, remove all the excess juice and toss with the rest of the sauce.

BARBACOA SAUCE

Ingredients
  1. 2 cups cola
  2. ¼ cup brown sugar
  3. 3 chipotles in adobo sauce
  4. 2 tablespoons of adobo sauce
  5. 1 teaspoon minced garlic
  6. 1 teaspoon cumin
  7. 1 teaspoon chili powder
  8. ¼ cup taco sauce (not salsa)
  9. pinch of red pepper flake
  10. 2 tablespoons apple cider vinegar
  11. 2 tablespoons corn starch
Instructions
  1. Place all ingredients in a medium sauce pan and simmer until thick.
  2. Turn heat off and let set.

TOMATILLO DIPPING SAUCE

Ingredients
  1. 1 tomatillo
  2. ½ jalapeno
  3. 1 handful cilantro
  4. juice from 1 lime
  5. 1 packet of ranch dressing mix
  6. 1 cup of milk
  7. 1 cup of sour cream
Instructions
  1. Place all ingredients in a blender and blend until smooth.
  2. Serve with barbacoa chicken wings.
