Roasted Red Pepper Pesto & Feta Appetizers #bringtheheat #mezzetta
Those of you who read my blog regularly know that as of the beginning of June I left my job with the marketing/PR agency. It was a great run and I enjoyed what I did, but I am so excited about this new season. The transition is still a fresh thing and right now I am reveling in some down time. Although Im sure well be taking a few long weekends away this summer, Mike and I are mostly looking forward to just hanging out at home together. More family time with Samhes growing so fast!and more time for friends sounds like the perfect staycation this summer.
Weve been spiffing up our backyard the past couple of weeks. Our yard is just the right size; theres enough green space for Sam and his friends to run around but its not so huge that maintenance is a problem. We love to kick back on our deck. We spend a lot of time there and frequently grill during the summer months. One of our friends recently commented how our food combos always wake up her taste buds. I cant wait until the next time she comes over so I can share this new recipe for Roasted Red Pepper Pesto and Feta Appetizers. It will wake up her mouth for sure Mezzetta peppers bring the heat to summer eats!
ROASTED RED PEPPER PESTO AND FETA APPETIZERS
- 1.5 cups flour
- 1 stick butter
- 4 tablespoons cold water
- 1 teaspoon melted butter
Preheat oven to 350 degrees. Combine flour and butter on stir in mixer. Add water, a tablespoon at a time. Mixture will be in large crumbles. Roll into small balls and place into mini cupcake pan. Press tart tamper into each dough ball to create indents. Brush melted butter over tarts before placing in oven. Bake for 20-25 minutes or until golden brown. Makes about 18 tarts.
- 1 jar Mezzetta Roasted Red Peppers (chopped)
- 2 tablespoons basil pesto
- 3 tablespoons feta
Combine red peppers, pesto and feta in bowl. Spoon onto cooked tart shells. Top each tart with remaining feta.
