Recipe: Nacho Bites with Pineapple Salsa
I am in love with pineapple salsa.
I seriously cannot get enough salsa. Make it the pineapple salsa version and I could eat it straight out of the bowl. So when Melissa of Frugal Fabulous Finds told me about her pineapple salsa recipe, I asked her to send it over for the party food section of our website.
Nacho Bites Ingredients
1 can refried beans
1/2 lb ground beef, cooked w/taco seasoning
1 cup shredded cheese
1 bag of chips
candied jalapenos, optional (I used this as my garnish)
nacho cheese sauce, optional (another garnish)
sour cream and/or black olives, optional (garnish)
Homemade Pineapple Salsa Ingredients
1 red bell pepper, cleaned and diced
1 can crushed pinapple, any brand
1/2 cup fresh cilantro leaves, washed and roughly chopped
1 jalapeno, finely chopped (leave seed in to add MORE heat)
1/4 tsp salt, optional
1/4 tsp pepper, optional
1 lime, you will need for juice
How to make nacho bites with pineapple salsa:
Arrange on a serving platter, your chips ~ with beans, meat, and cheese. I actually put mine in the oven to melt cheese on top on the low broiler setting. Garnish with whatever you like…including your homemade pineapple salsa, sour cream, black olives and/or candied jalpenos.
To make your pineapple salsa, simply combine all of your ingredients together and allow to sit for about 20 minutes or so. I actually took a blender/food processor to make it very fine – but that is not necessary.
Serve to your guests, while warm. You could keep warm in oven on lowest temp possible.
