Even though I grew up in Newfoundland where water and fishing define lifestyle, the summers were cool and just hanging out at the beach was not something I did.

Fast forward to today. Since we recently moved into a home with nearby beach access and hot summer weather, life has changed. Did I also mention a nice neighbor with a pool?  Summer at its finest!

All this in-your-face summer fun means we are in need of icy, refreshing flavors to have, to hold, and to share with our growing number of guests. I had no idea casual beach living would be such a draw!

Although most of my adult life I have been the poster child for a workaholic, this year I have been much more laid back. I’m relaxing my own rules for entertaining.

Tropical Paradise Popsicle

I still want to serve guests something they’ll love but I don’t want it to take forever to put together. Sam and his friends love eating Popscicle®—the original summertime treat.

I have yet to find an adult who refuses to pull his/her favorite from Popsicle’s® iconic yellow box, too!  I think it takes everyone back to their childhood and it helps that the bold colors look like a party waiting to happen!

Easy Popsicle Mocktail Recipe

There are over 20 unique Popsicle® flavors so everyone can choose his favorite. There are also three new Popsicle® varieties this season: Tropical Paradise, Sugar Free Red Classics, and Sam’s favorite, Teenage Mutant Ninja Turtles™.

I was dinking around with easy drink ideas to serve my hot and thirsty guests and came up with this great combination. The Popsicle® melts right into the drink for fun color and flavor!

Fresh Fruit Mocktail

I used the new Popsicle® Tropical Paradise collection of mango, strawberry-banana, island punch and pineapple but you could make personalized drinks for everyone by letting them choose their favorite Popsicle®.

DIY Drink Umbrellas

Adding little drink umbrellas makes this mocktail even more festive. They’re a quick and easy addition.

Cut a slit halfway through a cupcake wrap.

Run a thin bead of hot glue on one of the cut edges and overlap the wrap.

Add a tiny drop of glue on the blunt end of a wood pick and stick it inside the top of the “umbrella”.

Ta-da!  Isn’t that cute?

Ingredients
  1. Popsicle® Tropical Paradise
  2. Fresh Strawberries
  3. Fresh Pineapple
  4. Fresh Oranges
  5. Frozen Mango (for ice cubes)
  6. Mandarin Orange Sparkling Water
Instructions
  1. For the pineapple, make sure and wash the pineapple really well since you won’t be peeling it. Cut the top off and cut the pineapple into ½ inch rings. Cut each ring into quarters.
  2. Oranges, sliced into rings.
  3. Strawberries, cut in half.
  4. Fill each glass with frozen mango cubes. Add Popsicle® and fill with orange sparkling water. Add fresh fruit to the top. Don’t forget the umbrella. And fun straws.
