Oooey Gooey Slime Green Cupcakes #SlimeOn

If there is one thing I’ve learned being Sam’s mom, it’s that boys love anything messy. They aren’t deterred by dirt, slime or grime.. the more of it — the better! I’ve quickly learned to keep Sam busy with crafts and recipes that make his boy heart sing. Our projects together are often full of slime. This oooey gooey slime colored cupcake was a recent kitchen project together. These fun cupcakes are filled with slime green custard. But don’t worry: they’re delicious!

Sam loves to be my helper in the kitchen. When I told him we were creating green cupcakes, he was really excited. His favorite part is taste testing of course. He does enjoy helping to measure and mix as well though. He couldn’t wait to mix the slime like custard for these yummy cupcakes!

While decorating our cupcakes, I got some of the buttercream frosting on the counter. I was able to easily clean it up thanks to Bounty and a little water. SOUR CREAM CUPCAKES

Ingredients
  1. 1.5 sticks butter at room temperature
  2. 1 cup sugar
  3. 3 eggs
  4. 1 tsp vanilla
  5. 1/2 cup milk
  6. 3/4 cup low fat sour cream
  7. 2 cups flour, sifted with 2 tsp baking powder and 1/4 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees
  2. Cream butter and sugar until light and fluffy
  3. Beat in eggs, vanilla, milk and sour cream
  4. Fold in flour mixture
  5. Bake for 20 minutes
  6. Fill large cupcake liners just below tops
  7. Makes 12 cupcakes
Notes
  1. Tip: take a large core out of the cupcakes so the custard oozes out when bitten into.

CUSTARD FILLING

Ingredients
  1. 1 cup milk
  2. 1 tbsp cornstarch
  3. 1/8th cup sugar
  4. 2 beaten egg yolks
  5. 1/2 teaspoon vanilla
  6. Leaf Green Gel Food Coloring
Instructions
  1. Combine milk, cornstarch and sugar in a small saucepan over medium heat. Stir regularly so mixture doesn’t clump or burn to the bottom. Heat until bubbles form then remove from stove.
  2. Add 2 teaspoons of the heated mixture in the egg yolks and stir. Then slowly add the egg yolks into the heated mixture in saucepan.
  3. Add vanilla
  4. Turn burner back on medium heat, stir until thick.
  5. Remove from heat and add gel food coloring until desired color is reached. (A little goes a long way).

BUTTERCREAM FROSTING

Ingredients
  1. 3 cups confectioners’ sugar
  2. 1 cup butter
  3. 1 teaspoon vanilla extract
  4. 1 to 2 tablespoons whipping cream
  5. Leaf Green Gel Food Coloring
Instructions
  1. In a standing mixer with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
  2. Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
