My dad and stepmom are here so Ive been pulling out the fast and easy recipes but they still have to taste great. This one is a simple dish thats full of flavor and perfect for backyard summertime entertaining.
Fresh cherry tomatoes from our farmers market and basil punch up the taste. It doesnt take a lot of time and it looks good.
Most of us think of chicken broth as a great foundation for many winter soups, but did you know you can use it in other ways, in other seasons? If you substitute chicken broth for plain water, the broth contributes another layer of flavor that adds a richness to the final dish. I use chicken broth to create my Caprese Spaghetti.
- Boil spaghetti according to package directions, but use Swanson Chicken Broth instead of water.
- Drain the spaghetti.
- Add about one tablespoon of oil and one clove of garlic to the pan and saute the spaghetti on low heat for about five minutes.
- Remove spaghetti from the pan and add fresh cherry tomatoes, bocconcini cheese and basil.
- Top with your favorite balsamic dressing.
Sams Club has the newly released six pack of Swansons Chicken Broth so that makes it easy to stock up (I love going there with my Samhe says its his store!). Be sure to check out the demo happening nationwide this coming Friday (7-31) from 10:30 am – 12:30 pm. I like having reserves in my pantry so I can pull a greater variety of meals together without having to make a lot of extra trips. Times like now, with Dad being here, I really prefer to spend time hanging out together and catching up.
