Nachos with Pineapple Salsa
Zane is certain he’ll grow up to be a superhero (“A real one, Mom.”), but I’m not quite certain he’s found his niche yet. Although he also likes to create in the kitchen, I’m not sure he’s ready for his own cooking program either. He sure can make messes though! Since I’m part of the Mom It Forward Blogger Network, I recently received a Swiffer Green Box and we put it to use pronto.
When I was making dinner—very delicious nachos with pineapple salsa—Zane made cupcakes for dessert. I supervised but he did everything…including making a mess! I consoled myself with the idea that creative opportunities can lead to a child’s future occupational success. Or at least, very happy childhood memories!
He was so proud of himself and his lovely cupcakes. I was so proud of myself for letting it happen! But truthfully, I knew I would be using my new Swiffer WetJet after we were finished with our culinary experiments. Ever tried one?

NACHOS WITH PINEAPPLE SALSA
- 1 can refried beans
- 1/2 pound ground beef, cooked w/taco seasoning
- 1 cup shredded cheese
- 1 bag of chips
- candied jalapenos, optional (I used this as garnish)
- nacho cheese sauce, optional (another garnish)
- sour cream and/or black olives, optional (garnish)
HOMEMADE PINEAPPLE SALSA INGREDIENTS
- 1 red bell pepper, cleaned and diced
- 1 can crushed pineapple
- 1/2 cup fresh cilantro leaves, washed and chopped
- 1 jalapeno, finely chopped (leave seed in to add MORE heat)
- 1/4 teaspoon salt, optional
- 1/4 teaspoon pepper, optional
- 1 lime, for juice
Combine all salsa ingredients and allow to set for about 20 minutes. I used a blender/food processor to make it very fine – but that is not necessary.
Arrange on a serving platter: chips, with beans, meat, and cheese. I put mine in the oven to melt cheese topping on the low broiler setting. Garnish with whatever you like…including your homemade pineapple salsa, sour cream, black olives and/or candied jalapenos.
