Sam is getting really excited for Valentine’s Day — which means I’m getting really excited for Valentine’s Day thanks to the joy he’s sharing. We’re having nearly daily conversations about Valentine’s Day treats for his classroom. Each time we visit the store, he debates over potential cards for friends as well.
Last week, while shopping at Walmart, I was inspired by all the tasty M&M’s® flavor options. They have an awesome M&M’s® Red Velvet that I couldn’t wait to try. I knew they would make the perfect toppers on red velvet cupcakes.
I also picked up some other bags of candy: M&M’s® with a dark chocolate core, plus M&M’s® with a peanut butter core, Fun Size bags for Sam to give to friends and DOVE® Promises in both milk chocolate and dark chocolate. Can you tell I have a thing for chocolate? 🙂
The M&M’s® and DOVE® Promises are perfect for candy dishes — it’s hard to resist the delicious flavors! I love leaving them out so that I’m always ready for guests that stop by. They look so lovely!
Sam was excited to be able to take the Fun Size M&M’s® to school, both in his lunch as well to share with friends. They have a spot on every bag to write who they’re from and for which makes them an easy and excellent choice for Valentine’s Day.
After shopping, I couldn’t wait to get home and do some baking. I have a red velvet cupcake recipe that I love to use and the M&M’s® Red Velvet would be the perfect topper on my easy cream cheese frosting!
M&M’s® Red Velvet Cupcakes
- 3/4 cup cooked and pureed beets
- 1/4 cup grape seed (or any vegetable) oil
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 3/4 cups of flour
- 1.5 teaspoons cocoa
- 1.5 teaspoons baking powder
- 1 cup milk
Preheat oven to 350 degrees. Puree cooked beets once they have cooled. Blend with oil, sugar and vanilla. Combine dry ingredients and fold into beet mixture. Fold in milk. Fill cupcake baking cups. Bake for 18-20 minutes.
Easy Cream Cheese Icing Recipe
- 1/3 cup light cream cheese
- 1 teaspoon vanilla
- 2 1/4 cup icing sugar
- 1 tablespoon lowfat milk
Beat cream cheese and vanilla till fluffy. Slowly beat in in icing sugar, 1/2 cup at a time until fully blended. Ice cupcakes once cooled, then top with M&M’s® Red Velvet.
