We’ve been working like crazy on our new house, so thoughts of vacation have kind of been buried – even though we have an action-packed summer planned. We have several small excursions that will need to happen in the summer months as well as a trip to Newfoundland and then a surprise trip for Sam to Florida. I’ll be in the Orlando area on business — which he knows. What he doesn’t know is that he and Mike are tagging along!

It’s time to start plotting for adventure! Mickey Mouse, here we come!

I really like the idea of a vacation that gives kids an interesting experience, or as the Scholastic site says, “smarts building thrills.” The post on the best educational attractions at Disney Parks has been a great read. Can you imagine the fun a kid would have learning how to animate drawings? Or how about exploring the sea with Nemo and his friends? Walking through recreations of historical situations and hands-on learning brings life to the facts in a way that reading in a classroom never does.

But before we get all the planning underway, we’re going to be telling Sam that we’re going back to Florida. I’ve always loved the videos my friends have shared on Facebook of how they surprised their kids with a trip to Disney. I’d love to do the same for my little guy.

Mickey Mouse Peek-A-Boo Cake

Ingredients
  

MICKEY PEEK-A-BOO CAKE

  • 2 boxes of pound cake
  • 1 1/3 cups of milk
  • ½ cup of butter softened
  • 4 eggs
  • red food coloring
  • Mickey cookie cutter

Frosting

  • ¾ cup butter
  • 3 cups powdered sugar
  • 1/3 cup of milk
  • ½ teaspoon vanilla
  • sprinkles

Instructions
 

  • Mix first box of pound cake with 2/3 cup of milk, 2 eggs and ¼ cup of butter. Add about a teaspoon of red food coloring. Add more if you want a bright red, less if you want pink.
  • Pour batter into a 9×5 loaf pan and bake for 42 minutes (should be slightly under cooked).
  • Allow to cool and remove from pan. Cut slices the thickness of the cookie cutter; use cookie cutter to cut the shape out of each slice.
  • Line loaf pan with parchment paper and line the Mickeys up in a row. (Note: pour a little bit of batter in the bottom and set the Mickeys on top of the batter. He will be more in the middle of the loaf instead of at the bottom.)
  • Mix second box of pound cake with 2 eggs, 2/3 cup of milk and ¼ cup of butter and gently pour over the top. Using a spatula, evenly distribute batter over the pieces.
  • Bake for 45-47 minutes.
  • Allow to cool completely and remove from pan.
  • Mix frosting by whipping powdered sugar, butter and vanilla. Slowly add milk (up to ⅓ cup) until you reach the desired pouring consistency.
  • Set the cake on top of a cooling rack and gently pour frosting over top. Add a generous amount of sprinkles.
