Mango Angel Food Cake with Whisky Cream

We love to eat fresh, seasonal produce from our local farmer’s market, but I’d be ashamed to tell you how many times I have purchased something fresh and not been able to use it up before it wilts and dies in my fridge. Please tell me I’m not the only one to do that! I’ve found that the DOLE Canned Fruit in my pantry has been a life saver many times over. Whether fixing a treat for the family or making a quick dessert for company, having a stash of stable ingredients on hand makes summer entertaining a lot more convenient.

Case in point: my angel food cake with mango chunks and whisky cream. I wanted to make a special dessert for my Dad but I didn’t have time to get to the store. I knew I had ingredients to bake a cake…but what could I do to make it worthy of Dad? A quick check of my pantry and I was in business. Canned mangos would fancy up my dessert.

Angel food cake is a light, yet satisfying, cake option. DOLE Canned Fruit is rich in vitamins A and C, plus it’s naturally fat and cholesterol free and low in sodium. Perfect pairing for a healthier dessert version! Besides mango, you can find lots of DOLE Canned Fruit options, including pineapple, tropical fruit and Mandarin oranges. I’ve also used their products in fruit salad and muffins—but this time it had to be cake for Dad. This is what you do:

Mango Angel Food Cake

  • Make an angel food cake according to the directions on the box. Let it cool.
  • Use a bread knife to cut the cake in half.
  • Chop the Mango into small pieces.

Whipped Cream on Angel Food Cake

Whipped Cream

  • 3 cups heavy cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Optional for adult guests: Add ½ ounce whisky.
  • Mix until peaks form.

Recipe for Angel Food Cake with Mango

Slather the bottom layer with half of the whipped cream. Top with half of the mango pieces.
Position the remaining layer on top, covering with the remaining whipped cream and mango pieces.
Drizzle desired amount of creamed honey over the top.

Easy, quick and crowd pleasing!

Note: You could also use a ready-made cake, but if you keep a couple of boxed versions and DOLE Canned Fruit in your cupboard, you’ll be ready for a quick fix whenever you have company.
