Did you ever see a pumpkin that says anything except, Boo? This Jack-O-Lantern pizza doesn’t scream anything except “YUM”! We think this cute pumpkin is not only a perfect Halloween kid’s party food, but it would also be a fun-themed bento box lunch for school or even a special after-school snack. Kids will love the grinning pumpkin; Moms will love it not only because it is easy to make but because it’s a healthy food choice that celebrates the season without sugar.

This is what was used for one personal-sized pizza:

  • 1 small pita pocket
  • Sharp cheddar cheese (we used Gay Leas Ivanhoe brand)
  • 1 green pepper (part of)

We like the Ivanhoe sharp, aged cheese on this; there is just more flavor to it than a lot of other cheddar cheeses. Grate a generous ⅓ cup of cheese and sprinkle it over the pita bread.

Wash and dry the pepper before you slice and remove the seeds. Cut one strip and three triangles and arrange them on the cheese. We popped ours into the microwave for about a minute until the cheese melted, but microwaves vary in power so your cook time might be different. You can also put several of these on a cookie sheet and warm them in a conventional oven.

If you use this for a party, we suggest choosing a variety of peppers; a platter of green, red, yellow, and orange looks great together. Adults may like slightly hot peppers on theirs, but for the kids just stick with the sweet peppers.
