What a hectic time of year: end of school activities, recitals, graduations, weddings, baby showers and of course, birthday parties. Plus, my family still wants to eat at least three times every day (the nerve of them). I am basically on food blogs all day long and even I get stumped when it comes to coming up with menu ideas that will satisfy the masses, not to mention look good and not take forever.

Beyond basic searches, I have a few go-to sites. One of the best is Tablespoon, where I found this recipe for pizza crusts made from cauliflower. Tablespoon provides awesome recipe inspiration whether you’re feeding a hungry crowd or planning a sweet something just for two.

We’re having my sister-in-law and niece over for dinner – I will be thanking them for the rest of my life for letting us live in their basement for five weeks. It was a wonderful experience (for real) and I joke to everyone that they were way nicer to us than Mike and I would have been to them in the same situation.

Plus Pizza is a perennial favorite, right? So I think I can sneak the cauliflower by my husband and son, who are both so, so picky when it comes to food.

How to Make Cauliflower Pizza Crust

Tablespoon has a great recipe for cauliflower pizza crust that is the base for this pizza. It’s topped with a garlic Parmesan white sauce and a combo of bacon, kale and caramelized onion. The overall effect is satisfyingly familiar, but tastefully edgy.

Kale and Bacon Pizza


Crust Ingredients

  • 1 head of cauliflower, chopped
  • 2 eggs
  • 2 cups mozzarella
  • 2 teaspoons garlic powder
  • 1 teaspoon basil
  • 1 teaspoon oregano



  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 cloves of garlic
  • 1 cup milk
  • ½ cup Parmesan cheese
  • dash of salt and pepper

1. 3-4 strips of bacon, chopped and sautéed for 5-6 minutes until brown and crispy; pour excess fat from pan.

2. 1 bunch of kale, chopped and sautéed on low in (bacon) pan until kale has wilted.

3. 1 red onion, sliced; sauté in olive oil for 4-5 minutes. When onions start to brown add ¼ cup of balsamic vinegar and 1 tablespoon of honey. 

4. Cook until onions are completely caramelized, about 20 minutes.  Add water to keep from burning if need be.

Garlic Sauce:

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2 cloves of garlic
  • 1 cup milk
  • ½ cup Parmesan cheese
  • dash of salt and pepper


In a small sauce pan, sauté garlic in butter for 1-2 minutes.  Add flour and stir.  Slowly whisk in milk and mix until smooth.  Add salt and pepper.  Turn off heat and stir in cheese until melted.
