Hawaiian Roast Chicken with Bacon Wrapped Peppers #AYearofSunshine

Do you like pineapple? I LOVE it, which is funny because I couldnt stand it when I was a kid. For special occasions, my grandma used to make pineapple upside down cake. She said the pineapple slices were like rays of sunshine, full of good things for me. I liked the juice part that was mixed with brown sugar after it baked, but I would pick off the pineapple before I would eat the cake. What was the matter with me, little ray of sunshine that I was?! I can literally eat an entire pineapple in one setting now sorry Gram! To prove my grave repentance, I suggest serving this delicious Hawaiian Roasted Chicken for Mothers Day, with a side of Bacon Wrapped, Cream Cheese Filled Peppers. Wild rice and a fresh salad rounds out the menu. Oh, and dont forget to make dessert. I suggest Pineapple Upside Down Cake.
Hawaiian Roasted Chicken
- 1 cup DOLE Canned Pineapple Juice
- 1 (4 pounds) whole broiler-fryer chicken
- 2 tablespoons olive oil, divided
- 1/3 cup pure maple syrup
- 3 tablespoons Dijon mustard
- 1 tablespoon low sodium soy sauce
- salt and pepper
BACON WRAPPED PEPPERS
- 4 poblano peppers (mild/medium heat)
- 1 brick cream cheese
- 1 cup shredded cheddar cheese
- 1/2 cup diced pineapple
- 8 strips of bacon
- Reheat oven to 350°
- Blend cream cheese till smooth
- Fold in cheese and pineapple
- Half peppers, wash and clean seeds
- Stuff peppers halves with cheese mixture
- Wrap each half in a slice of bacon
- Bake for 30 minutes or until bacon is browned
- Makes 8 servings
