Grilled Dessert with Fruit & Refreshing Kool-Aid Juice

This weekend, Mike and I decided to take advantage of the nice weather and spend some time outside. After years of not riding a bike, I recently purchased a lovely new yellow bike, complete with handlebar basket, and have fallen back in love. So with the sunshine out, Mike and I strapped on our helmets and went off for a leisurely ride together. There is a lake near our house with a fantastic trail. Now that the snow has melted, we finally had a chance to use it! While riding, I started planning our snack when we returned home: a refreshing fruit juice drink and a favorite grilled treat.

Earlier this week, I stopped at Walmart to pick up a few essentials. Hoping for good weather, I also picked up items to enjoy with Mike this weekend. It’s always fun to surprise him with a tasty treat I know he loves — plus, something new to enjoy.

While shopping, I spotted a brand new Kool-Aid product: their ready to drink, 96 ounce bottle. It’s the perfect size to take to sporting events or to stick in the fridge before you entertain friends. I knew it would be the perfect treat after a long bike ride so I grabbed a bottle of the Fruit Punch flavor, along with some sliced pound cake and fruit. I also picked up a package of Kool-Aid Singles so that I could toss it into lunchboxes this week for a special treat.

When we returned home, I told Mike to fire up the grill while I prepared the snack. I used:

  • 1 avocado
  • 1 mango
  • 4 large strawberries
  • 1 tablespoon lemon juice
  • Fresh mint
  • Sliced pound cake {you could also use lemon flavored!}

I buttered each side of the sliced pound cake and had Mike grill it quickly on each side until golden. I chopped the avocado, mango, strawberries and mint, mixed and squeezed the lemon juice over everything. When the pound cake was grilled, I spooned the mixture over the cake and we headed out to the patio. The Kool-Aid was the perfect complement to our treat. It was absolutely delicious, not too sweet and very refreshing after our bike ride. Plus, the fresh and fruity juice drink looked so colorful on our table as we enjoyed a spring evening!

I know we will be heading back for more Kool-Aid at Walmart. Mike, an avid fisherman, was thrilled to hear that pro fisherman Jim Dillard will be hosting several fun events at local Walmart in the coming weeks. I also liked Kool-Aid on Facebook so I can stay up to date.

It was an enjoyable — and quiet — evening for Mike and I. It was the perfect chance to talk while enjoying a delicious and refreshing treat on a spring evening. I hope we get to do this again soon!
