Grilled Cheese Burger
When spring finally offers you a sunshine-and-blue-sky afternoon, you know you better grab it. Drop the routine and head outdoors with your eager child before the rain starts spitting at you again! But as all moms know, when it’s time to go inside everyone still expects you to have dinner ready. That’s where this delicious Grilled Cheese Burger play on a grilled cheese sandwich comes in. It’s a quick way to satisfy everyone and still let you join in the fun.
When we moved into our new house last summer, the beach down the street almost seemed like an extension of our yard. We spent hours on the beach and in the water. This season we’re learning spring breezes moving over the water don’t feel quite as warm.
But that’s OK.
As long as Sam and our dogs keep us moving—and they do—the sand, sky, and fresh air feel like glorious freedom, especially to a winter-weary seven-year-old. And his mom.
Sam’s grin promises he doesn’t mind rosy cheeks and a cold nose. But all that running and jumping sure does work up appetites.

Grilled Cheese Burger
8 ounces ground beef
3 slices of bacon
Dempster’s White Bread
4 slices of American cheese (or cheddar)
In a food processor, combine ground beef, bacon, salt, and pepper. Pulse until bacon and ground beef come together and bacon is finely chopped.
Form two patties and place on a preheated griddle over medium low heat. Cook for 3-4 minutes on each side or internal temp reaches 165.
Lightly brush olive oil on one side of two slices of bread.
Flip the bread over and on the other side, place two pieces of cheese on each slice.
When the burger is done, place on top of cheese with a tomato slice and place the other slice of bread on top.
Put the sandwich on a panini press or griddle and cook until golden brown and cheese is bubbly.
