Gluten Free Almond Granola Parfait

May is Celiac Awareness Month.
I remember the first time I ever heard of celiac disease. It sounded so bizarre. How could eating something as simple as a piece of bread cause a problem? Even though the disease has seemingly been around since the second century, the cause wasn’t discovered until the 20th century. That gap represents a whole lot of suffering.
Today it’s accepted that celiac disease is an immune reaction that is triggered by eating gluten, a protein found in wheat, barley and rye. For affected individuals, gluten causes inflammation that damages the lining of the small intestine, which prevents absorption of some nutrients. It can be very uncomfortable, causing bloating, diarrhea and weight loss. And worse, the body is deprived of vital nourishment and that can cause problems throughout the body.
Avoidance of gluten is the first line of celiac disease management. Even a short time ago, that meant a lot of deprivation! Fortunately for celiac sufferers, today there are a number of gluten-free products.
During this month, organizations such as the Celiac Disease Foundation are working to raise awareness of celiac disease and make suggestions about how to lead a healthy, gluten-free life. 100 select stores will be supporting this campaign by focusing on in-store demos.

Although I’m grateful gluten is not an issue for me, I do have friends who must avoid it. When they come to my house I sure want to be able to offer them something yummy that won’t cause a problem. I bought some Van’s Simply Delicious® Cranberry Almond Granola and came up with a gluten free parfait that is delicious and simple to put together.
