Gearing Up for Fall: Autumn Leaf Cupcakes

Cupcake Ideas for Thanksgiving

On Monday, I made these cookie topped cupcakes. Of course, the first go-around I added double the amount of milk I should have in the flood icing. What a disaster. It actually didn’t dawn on me until I started to put the icing in the piping bag and it started pouring out of the tip like copper colored water. I had it all over my arms, clothes, face and even my leg (don’t ask). Basically, when I was finally done icing the leaf cookies, I had to jump in the shower.

  1. 1 Box Vanilla Cake Mix
  2. 1 Box Vanilla Pudding
  1. (make a double batch for 12 cupcakes)
  2. 1 stick butter
  3. 2.5 cups powdered sugar
  4. 1 teaspoon vanilla
  5. 3 teaspoons cocoa
  6. 1/4 teaspoon salt
  7. 2 tablespoons heavy cream
  1. 2 sticks butter at room temperature
  2. 1 cup sugar
  3. 1 teaspoon vanilla
  4. 2 medium eggs
  5. 2.5 cups flour
  6. 1/2 teaspoon salt
  1. 1 cup powdered sugar
  2. 2 tablespoons milk
  3. Add gel coloring (copper)
  4. Stir until well combined
  6. 1 1/2 cups powdered sugar
  7. 3 tablespoons + 2 teaspoons milk
  8. Add gel coloring (copper)
  9. Stir until well combined
  1. Add pudding mix to cake mix and follow baking instructions on cake mix.
  1. Mix all ingredients until light and fluffy
  1. Preheat oven to 350 degrees
  2. Mix butter and sugar for 1-2 minutes
  3. Add eggs and vanilla and mix until just blended
  4. Combine flour and salt in a separate bowl
  5. Add to wet mixture
  6. Mix until only combined, do not overmix
  7. Put dough between two sheets of parchment paper and roll out
  8. Cut into shapes and place on greased cookie sheet
  9. Bake for 10 minutes
  10. Let cool before icing
  1. Use a piping bag with a Wilton #3 tip to outline the cookies
  1. Use a piping bag with a 1M tip. Work from the center of the cupcake to the outside.
