Football Party Food Ideas #QuesoForAll

With the big game only a few weeks away, I am getting excited to host a football themed party at our house. Since we have several events happening this month, I am sticking with simple ideas for our football bash. I have learned that when the game is on, supplying filling and easy to eat food is a sure win with our party guests. Today’s recipe will have you cheering because it’s so easy to create! It’s Queso For All!
I created a basic Queso dip using RO*TEL and VELVEETA. This two-ingredient (cut the s) Queso is zesty, creamy, yummy and easy — definitely a crowd pleaser! It’s a staple for (not to) any occasion’s entertainment spread, (use a comma here) especially upcoming football parties and tailgating events. I really love that it’s easy and fast to create–perfect if you’re hosting a last minute get together!
You can also easily add in fresh ingredients to make it your own. I love the idea of creating a Queso bar: start with your RO*TEL and VELVEETA Queso and then provide bowls of mix ins like beans, rice, beef or chicken, fresh cilantro, onions, peppers and tomatoes so that guests can customize their dip. I added black beans to ours and then topped the bowl with fresh tomatoes and cilantro.
For our upcoming football party, I decided chicken quesadillas were on the menu. They’re simple and quick to make and the Queso adds a real pop of flavor.
- 12 corn tortillas
- 2 cups shredded chicken
- 1 1/2 cups RO*TEL and VELVEETA Queso
- 1/2 cup black beans
- fresh cilantro
- Heat a pan over low heat.
- Place a corn tortilla in the pan and top with chicken, black beans and cilantro. Top with Queso.
- Add tortilla shell on top.
- Flip to the second side and allow to brown.
I love how quickly you can make these quesadillas. You could even make them on an electric griddle so you could do several at once. This makes it easy when you have a pile of hungry guests in your home that you’re quickly trying to prepare a meal for. Or if you’re working during commercial breaks. 😉
