Dinner Ideas for 2 + Apple Pie Cheesecake

Remember that old adage about the way to a man’s heart is through his stomach? I used to scoff at that. I laughed. Now…well, let’s just agree that somebody knew what they were talking about. They were probably Italian. They were probably having a mangia moment too.
Picture a relaxed atmosphere, a delicious meal, the magic of candlelight and intimate conversation—the perfect setting for a romantic dinner for two. Maybe throw in a shoulder rub to totally focus attention on your beloved. All of this preparation speaks volumes of your devotion. Pretty heady stuff. Is that how your date nights at home unfold?
I gotta get real…throw in a joke or two. Laughter, prepping a meal together and robust eating is a more accurate picture of a romantic dinner for Mike and me. Scooting Sam off to bed, giving the table an interesting set-up and noshing through a delicious meal makes a mangia moment at our house. A little background music and the classic Bertolli Skillet Meals for 2 makes the magic happen with ease.
The set-up is always part of a fun evening for me. This time I used faux alligator skin placemats—love the texture—under my favorite new dishes. The earthy colors and pastoral scenes speak of lusty countryside escapades and I adore the way they meld with the chargers that look like fine needlework.
Can’t forget a bit of candlelight glow. It always lives up to its romantic reputation.
Bertolli’s Chicken Marsala makes an easy main menu feature that elevates the meal to something really special. It is a luscious melding of chicken, mushrooms, green beans and roasted red skin potatoes in a savory marsala wine sauce. You have 19 G of protein in a serving—all of that for only 330 calories. It’s perfectly portioned for two. Yes, I’m in love!
I paired the Chicken Marsala with a fresh spring greens salad with brie—a simplified version of the salad at our wedding celebration. Mike remembered. He got points for noticing. Ahh, romance.
We topped off our love feast with creamy cheesecake, topped with apples and a side of laughter. Here’s the recipe. You’ll have to add your own jokes:
- 1 package cream cheese
- 1/4 cup sugar
- 1/2 teaspoon vanilla
- 1 egg
- 4 vanilla wafers
- apple pie filling
- Preheat oven to 325 degrees.
- In two small mason jars, line the bottom with wafers, break wafers where needed to fill in spaces.
- Blend cream cheese, sugar, vanilla and egg on medium speed. Pour over wafers, filling to about 1/2 inch from the top. Bake for 25 minutes. For the last 5 minutes, add pie filling to the top and continue baking. Remove from oven and cool.
- Optional Glaze: combined 2 tablespoons powdered sugar, 2 drops milk and stir vigorously. Drizzle over cooled dessert.
