Cupcake Pinata Cake
True confession: I adore receiving love letters and tokens of affection. Nowadays that happens more often. Want to know my secret? Here’s how to make Valentine’s Day even sweeter.
I think my enthrallment with secret admirers and sentimental notes began with the lacy pink and red Valentines I received in elementary school.
With teacher’s encouragement, all the kids decorated empty cereal/shoe boxes in anticipation of exchanging Valentines. They were fanciful mailboxes embellished with hope, flowers (mostly the girls’), monsters (mostly the boys’), and colored paper. Mine included lace, glitter, and hearts.
Lots of hearts. I especially like the SweeTARTS Hearts with little messages printed on them.
Wished-for sentiments, secret admirers, AND candy made Valentine’s Day a much-anticipated event. Like all the girls, I was hoping that cute boy would write something on mine besides his name.
Holy moly—he did, and cupid’s arrow struck!
Fast forward a few decades. I’ve been on a quest to replicate that first-blush excitement of love is in the air ever since that first-grade Valentine’s Day. Now that I’m a mom, I know just the thing to thrill my little guys who are not excited about lacy anything.
It’s called a Valentine Piñata Cake.
It’s filled with SweeTARTS Hearts, inscribed with kisses and hugs and sweet sentiments that let my honeys know I care. My boys love SweeTARTS and since they contain no artificial flavors or colors, I don’t mind a little indulging.
The cake is much easier to pull off than you might imagine and seeing the looks of surprise on your kids’ faces is sooo worth it!
But if you don’t want to bake a cake, both SweeTARTS Hearts and SweeTARTS Soft and Chewy Ropes come in Valentine-themed packages, already printed with gift tags. The SweeTARTS Hearts are my favorites (remember
my love affair with the little messages?) but you’ve got to try SweeTARTS Soft and Chewy Ropes too—cherry-flavored
licorice with a tart punch-flavored center—a treat within a treat.
They’re reasonably priced so they’re a fun option for gifting the boys’ friends and classmates (SweeTARTS Hearts 4.5
oz./MSRP $1.50 and SweeTARTS Soft and Chewy Ropes 1.8 oz./MSRP $.89). I mean, I like to bake but I’m not making that many Piñata Cakes!
The allure of Valentine’s romance and declarations of affection continue to delight me. True confession: Love notes from cute, short guys with childish scrawls still make my heart throb!
- 1 box of prepared chocolate cake mix
- 1 box of prepared sprinkle cake mix
- 3 sticks of butter
- 4 cups powdered sugar
- red food coloring
- 1 box of SweeTARTS Hearts
- In base of cupcake cake pan, fill 2/3 with chocolate cake mix.
- In top of cupcake cake pan, fill 2/3 with prepared sprinkle batter.
- Bake at 325 for 45-60 minutes or until toothpick inserted in middle comes out clean.
- Remove from oven; let cool.
- While cake is cooling, prepare frosting. Whip butter with powdered sugar on high until light and fluffy.
- Divide frosting into thirds. Make one a deeper color, one a lighter color and leave one white.
- Fill a piping bag with darkest color first; then fill it with light color and add white last.
- Once cake has cooled, cut out middle of bottom layer; fill with one box of SweeTARTS Hearts. Pipe frosting around edges and set top layer on the cake.
- Pipe frosting onto cake, starting at bottom, and working to the top.
- Note: I used an offset spatula to spread frosting over the cake after I piped it to give a more finished look.
