Creamy Cashew Fettuccine

Do you think we ever watch football on the big screen at our house? Even though “my” sport is basketball, the whole crew gets into cheering and coaching football on Monday nights! This year, we’re also getting into the #MeatlessMondayNight challenge. Have you ever heard of MeatlessMonday? The idea is to encourage people to not eat meat on Mondays to not only improve their health, but the health of the planet as well. Since Monday is the beginning of the typical work week, it was chosen as “the” day to encourage people to make healthier decisions in hopes that good choices would follow throughout the week.
Any routine change can begin with just one trade-out. I think #MeatlessMondayNight is a good way to adopt a more plant-based diet. This delicious (and easy!) Creamy Cashew Fettuccine is a winning meal for any night, football or not. My guys love pasta. I love not spending a whole lot of time in the kitchen! We like all of the Silk beverages. I’ve found that dairy doesn’t always agree with my little guys or me. Silk tastes great and makes it simple to trade out dairy in recipes. Using Silk’s plant-based milk makes this a delicious meat and dairy-free meal that satisfies.
- 3 cloves garlic, chopped
- 2 tablespoons olive oil
- 1 cup vegetable broth
- 2 cups Silk Cashew Milk
- 350 g package of fettuccine
- 1/4 cup of chopped cashews
- 3 teaspoons dried parsley
- 2 teaspoons dried basil
- salt, pepper to taste
- fresh basil
- Saute garlic in bottom of pot with oil for 1-2 minutes, till fragrant
- Add broth and Silk Cashew Milk, bring to a boil.
- Add fettuccine and cook according to package instructions
- Fold in cashews, parsley and basil
- Add salt and pepper to taste
