Cheese Stuffed Pork Meatball Appetizers

I’ve always heard good neighbors are hard to come by, but that isn’t true in our neighborhood. We have a street full of good folks who are fun to spend time with. Of course we see the guy in the house directly next to ours most frequently and he’s a favorite. Aren’t we lucky?!
When we first moved into our house, we had a different set of neighbors. They were really helpful to Mike and me as we were first-time home owners. We hated to see them move and couldn’t believe our good fortune when the new owner, Muoi, turned out to be just as nice. Mike and Muoi share a lot of common interests and they car pool together. Even our dogs are friends!
When there’s a heavy job that needs an extra set of muscles, Muoi is always ready to help out. While we were gone on vacation Muoi kept an eye on our house. If I need a model for a photo shoot, Muoi is a good sport and smiles pretty! He is always ready to help Mike and Sam do some taste tests for me, too.
So when it came time to show Muoi how much we appreciate him, we decided to do it with a dish for “Porksgiving.” You might ask — What is Porksgiving? Well, to inspire people across the country to give and say thanks, the National Pork Board will celebrate “Porksgiving” – a time for giving back (with pork) to those who give back – from November 2 through the end of the year. And that is why I’ve decided to say thanks with a dish for Porksgiving. Good neighbors are hard to come by and we’ve hit the jackpot with Muoi.
When I made these cheese stuffed chorizo meatball appetizers, I thought Muoi would really like these and it would be a simple gesture to let him know we appreciate him. Many cuts of pork are as lean as skinless chicken and it’s a great source of protein, plus there are many essential vitamins and nutrients in pork. Sounds like good stuff for a single guy who doesn’t cook a lot! You should have seen Muoi’s delight when I knocked on his door to deliver a plate full of these appetizers—he made a meal of them!

- ½ pound ground pork
- 1/2 cup bread crumbs1 egg
- 1/4 cup pork sausage, such as chorizo, chopped
- 1 tablespoon chopped fresh Italian parsley
- 1/2 cup chili sauce
- 30 small squares white cheddar cheese
- Skewers (optional)
- Preheat oven to 350 degrees.
- Combine all ingredients except the cheddar cheese in a large bowl.
- Scoop up a small mound of meatball mix.
- Place a cheddar chunk in center.
- Roll into a meatball shape.
- Bake for 15 minutes.
- The National Pork Board advises using the following temperatures when preparing pork: cook pork chops, roasts and tenderloin to an internal temperature between 145°F (medium rare) and 160°F (medium), followed by a three-minute rest. For ground pork, cook to an internal temperature of 160°F.
Using skewers and adding a decorative tie makes these appetizers look ready for a party—they’d be just as great for a holiday gathering as they are for a nice next-door neighbor.
