Cheddar Rosemary Cornbread Mini Muffins: Part 1

We’ve been having a blast of summer’s last hot breath. It doesn’t feel like this could possibly be September, but it’s true. School supplies and flowering mums are for sale everywhere you go! At our house, we’re on the final countdown of days until first grade starts. Sam is getting really excited! You’d think he was leaving for some distant land by the way I’ve been catching every snuggle with him that I can. Sam is just fun and hanging out with him is pure joy. I’m going to miss mornings with my little buddy.

Cheddar Rosemary Cornbread Mini Muffins

With the shift of seasons, I start doing some things a little differently. I know we’ll be busy once school starts again. We took a run to Kroger’s yesterday to stock up the pantry. I like to bake anytime, but especially in the fall and winter I’m even more inspired to spend time in the kitchen. The J.M. Smucker Company included me in a challenge to see how convenient it is to use their Martha White® Baking Mixes so Sam and I went on a mission to pick some up.

Sam convinced me I needed him as ballast on the shopping cart while we sped through the aisles.

The Kroger display of all the Martha White® Baking Mixes was filled with lots of choices, and they’re very reasonably priced. They’re a great time-saver for some good ole’ Southern cookin’. I promised Sam we’d make cornbread—actually I’m going to plus up the baking mix and make cheddar rosemary cornbread mini-muffins.

This is Sam’s response. Notice how hungry he is telling me he is, without using words. They do tell you to never go shopping when you’re hungry…I don’t think that idiom can possibly apply to little boys who are always ready to eat.

An interesting aside, there really was a Martha White. Her parents owned a flour mill that was known for its high quality Southern flour. When it came time to name their finest flour, Martha’s dad named it after her. Kids do serve as great inspiration!

Tomorrow I’ll share the recipe and photos of my cheddar rosemary cornbread mini-muffins…if someone named Sam doesn’t eat them all first.
