Carrot Apple Muffins with Maple Cream Cheese Filling

Are you getting ready for Easter celebrations at your house? It’s such a special time of year! With the slightly warmer temps and a definite shift into spring, I think we’re all ready to pack away coats, boots and all vestiges of winter. The teaser warmth definitely lifts my spirits. It also shifts my appetite.

Carrot Apple Muffins with Cream Cheese

An Easter brunch is just the occasion to bake these delightful carrot-apple muffins with maple cream cheese filling. They are delicious and they leave you feeling satisfied, too. This recipe is my take-off from the Burnbrae Farms recipe nest. If you follow my blog, you know that I’m a big fan of Burnbrae Farms’ eggs. They’re nutritious, wholesome and affordable eggs and I appreciate their consistent quality.

Omega 3 Eggs

My earlier visit to Burnbrae Farms really impressed me. For example, their Free Run Omega 3 eggs are produced from hens that live in a safe, clean environment. The hens are free to roam in wide open barns where they have perches for roosting and privacy for laying eggs (which hens prefer). They have opportunities for doing the kinds of things that keep chickens happy!

I especially like the Omega 3 Eggs because they’re an easy way to consume those important omegas—and I love the taste of eggs! Most people don’t get enough necessary omegas in their diet. Omegas are important because they help lower cholesterol levels and help reduce inflammation.

Carrot Apple Muffins are important because…you want to make something special for an Easter brunch! But don’t wait for a holiday to make these. They are also superior for an any-day breakfast. Or snack. 🙂

Carrot Apple Muffins with Maple Cream Cheese Filling

  2. ½ cup all-purpose flour
  3. 1 cup white, whole wheat flour
  4. ¾ cup coconut sugar
  5. 1 teaspoon each baking powder and baking soda
  6. 1 ½ teaspoons cinnamon
  7. ½ teaspoon salt
  8. 3 Burnbrae Free Run Omega 3 eggs
  9. 1/3 cup coconut oil, melted and cooled
  10. 1 tablespoon vanilla
  11. ¼ cup milk
  12. 1 cup shredded carrots (2 medium)
  13. 1 medium apple, diced
  14. ½ cup raisins
  15. ¼ cup chopped nuts
  16. ¼ cup unsweetened flaked coconut
  18. 8 ounces cream cheese
  19. 1/3 cup maple syrup
  20. 1 teaspoon vanilla extract
  21. pinch of cinnamon
  2. In the bowl of stand mixer, add dry ingredients and whisk together.
  3. In a separate bowl add milk, eggs, vanilla and coconut oil. Whisk to combine.
  4. Add wet to dry ingredients and mix on low until just combined. Stir in carrots, raisins, coconut, nuts and apples.
  5. Line a jumbo cupcake pan with cupcake liners and spoon batter evenly into each muffin, about 3/4 full. Bake at 375 for 15-20 minutes. Allow to cool before filling.
  7. Whip on high until light and fluffy. Spoon into a piping bag with a 2A or 230 tip. Insert tip halfway down into the muffins and squeeze filling into muffin. (If you don’t have tips, you can use a paring knife to cut out a small opening, then fill a plastic baggie to squeeze filling into the muffin.)
